I remember some discussions for it too, but don't know if anyone posted an actual recipe.

You can use pretty much any recipe and just modify to be IP friendly. Substitute cauliflower rice for the regular rice.

Stuffed Bell Peppers

1 lb ground turkey
1 lb lean ground beef
1 large zucchini
diced
1/4 head of green cabbage, diced
4 scallions chopped fine
6 bell peppers seeded.

Brown Turkey in a tablespoon of olive oil.
When Turkey is half way cooked put in the ground beef.
Add the zucchini, cabbage, scallions plus season garlic, salt and
pepper. 2/3 chicken or beef broth to keep from drying out.
When vegetables are still a little crunchy drain the meat.

Take the peppers cut the tops off and clean out.
Microwave for 3 minutes on high.

Stuff peppers with meat mixture. Place in an oven safe dish.
Bake at 350, uncovered for 35 minutes.

When you remove them from the oven each person can use
the Walden's Farm BBQ dressing and the Ketchup.
Together they make a fantastic stuff Bell pepper

Cabbage Rolls! Absolutely Awesome :-)

Ground turkey, onions, mushrooms, garlic, 2 eggs, and tomatoe paste make the stuffing. I made grated cauliflower rice for the rice component of the dish. Lightly blanched cabbage leaves make the rolls. Cover and bake for 50 min at 350. Remove foil for 10-15 more minutes of uncovered baking.

Oh my gosh - absolutely wonderful and they stayed together - which was surprising!
