Cajunloser, that is exactly my concern. I cannot have 3 carbs at a meal either.
Higher fiber carbs like the quinoa keep the blood sugar down..but I am going to start investigating the books and advice here.

Got the ok from my coaches who called into a "more experienced" coach and they said the coconut flour was fine. So I made the biscuits this morning & mine were runny so I put them in muffin tins & got twelve and ate two with berries & eggs & butter for breakfast. YUM!! But the problem would be I want to keep all 12!!

I thought I posted my reply just a second ago, so if it shows up a second time, I'm sorry.

Maile, I'm going to proceed very slowly and do my research, too.

I did well on Atkins for a couple of months until I started adding fruit. To continue losing weight, I had to eat fruit every other day which was fine with me. So if I have to eat carbs every other day in Phase 2, I'll do that.

My doctor has been pleased with my progress and my blood work. She also told me to have a protein with my carb which seems to be what is on the Phase 2 sheet.

And hopefully, if we're careful, we won't gain any of this weight back!
