A lot of times, you don't get straight answers from people, regarding behavior like this, because they don't have them. He may not know why he thinks you're the greatest thing since sliced bread one minute, and evil incarnate (or at least a major irritation) at others. Emotions are complicated, and men often have more difficulty than women identifying them, much less expressing them or understanding them. It isn't that men are less emotional than women, it's that they don't have a clue which emotion they are feeling and why (obviously not true of all men, or untrue of all women, just a generalization).
Or maybe it's just my arrogant opinion that women are better at knowing when and why they're being irrational.
