Oh, Gary, I'd make it myself if I could get that out of him!
I absolutely loathe leftovers (see previous post and mom comment - you'll understand I hope), but I'd eat every reheated bit of his chili... mmm. And there is never any left for longer than a week even though he makes a huge, and I mean huge, pot of it! *playfully glares at family members*
He's one of those, "hm, what do we have in the cabinets/pantry" & "some of this, couple cans of that, what's left of this" kind of cooks, so measurements have never been done and it is different every time!
But the heat, consistency (thick sauce-like-liquid, with nice chunks), and spices are always right and the variations are good (except when he made it with buffalo, I wasn't backing the bland-tasting buff' meat in chili, but he makes it with chicken or turkey breast too and those are so good, same with the traditional ground lean beef! The beef, especially with melted sharp cheddar on top, and maybe a rather optional piece of good cornbread or buttered white bread to go with it is the absolute best). The chili is always best the next day too, when the ingredients all really have a chance to mingle together.
It has been a while since he's made some, since my parents and I are trying 'healthier' things, but I think I'll sneak over there Friday night and spy on him, call him up probably this afternoon... But I have to be careful! He might make it before the end of this week and I'll miss the opportunity to hover and take notes! Wow, can you tell that I am obsessed?

I've tried the last three times he's made it to get a recipe out of him, first time he didn't write it down, second he had already finished making it, and last time I came in as he was putting in the last ingredients.
Everyone seems to make 'chili' different, and that's annoying when you want some and end up with a meat soup where I'm at. Bleh!
