Yes, I often microwave eggs when I am at work. I make some kind of souffle. I put 5 egg whites with cheese in a bowl, any kind of cheese will do. Then I mix in some frozen veggies, and microwave for about 7 minutes. I keep all the ingredients in the fridge or freezer, at work, it always comes handy. It's low carb, high protein, quick and delicious. You can add the yolks if you don't mind the fat, I try to avoid them.

If you are into Epicure at all they have an awesome Microwave Omelette maker. It's a silicone steamer that you make omelettes in the microwave with. I use it daily. Takes less than 5 minutes to make delicious eggs.
