I think a small amount of light soy sauce should be fine. Just make sure the salt content is low.

In the Extreme book, Dr. Ian recommends that you "add flavor to your veggies or rice by adding 1-2 tablespoons of soy sauce". He doesn't specify low sodium or not, but the low sodium kind wouldn't hurt!!
