Default Cosmopolitan Turkey Salad

servings | 6
POINTS per serving | 6

Ingredients
3 cup grapes (red or green)
2/3 cup reduced-calorie mayonnaise
1 Tbsp Dijon mustard
3/4 tsp curry powder
16 oz cooked turkey breast
2 Tbsp shallot(s)

Instructions
Put grapes, turkey and shallots in large bowl. Combine mayonnaise, mustard and curry powder, stir into grapes, etc. Refrigrate at least 1 hour before serving.

I love curry! This is a great dish to bring for a potluck. I'd been making it with regular mayonnaise for years. Finally made it with the reduce-calorie mayonnaise (still delicious) and ran it through the e-tools recipe builder for points total.

Default turkey burger

Just tried this tonight and they were REALLY good. I am definately a red meat eater so I was hesitant but ended up pleasantly surprised!

1# ground turkey
3 scallions minced
2T reduced-sodium soy sauce
2T ketchup
1/2t garlic powder
1/2t freshly ground pepper
5 strips turkey bacon cooked crisp

Combine ingredients and form into 5 burgers

Heat indoor grill pan sprayed with non-stick spray or fire up the grill.
Cook the burgers until cooked through, about 6-8 min each side. My Weber grill book says it should have internal temp of 165.

Above recipe is only 4 points!
I added a slice of cheese and put it on a bun and it came to a total of 8 points

how do you figure out how much to serve when it says servs 6? on the spicy turkey chili?

Turkey Taco/burrito

1 lb ground turkey, browned
onions
peppers...green, red or both
chili powder
garlic powder
whole wheat tortilla (4-5 pts usuallly) or taco shells
1 can black beans-drained
salsa
low fat cheese if desired

Brown ground turkey. Drain if needed.

Add peppers and onions. Add spices to suit taste. I rarely measure anything so I don't have an exact amount.

Cook until veggies are of desired tenderness.

Drain black beans. Add to turkey mixture. Cook until beans are of desired tenderness.

Spoon mixture into taco shell or tortilla. Add some salsa and low fat cheese if desired.

Mixture is 1 point per ounce.
I use 3 ounces of the mixture and a whole wheat tortilla,, add salsa and 1 pt of shredded cheese. Total gives me 8 points, but it is a big burrito when filled.

This recipe reminds me of eating a fajita.
