Baked Apple and Graham Cracker Pudding - 3 Points

3 cups cored -- peeled, and diced
cooking apples, (6 small)
1/2 cup pourable Sugar Twin
1/4 cup raisins
1 1/2 cups purchased graham cracker crumbs -- or
24 (2 1/2 inch) graham cracker squares -- made into crumbs
1 1/3 cups Carnation nonfat dry milk powder
1 1/4 cups water
1/2 cup Cary's sugar free maple syrup

1. Preheat oven to 350 degrees F. Spray an 9-by-9 inch cake pan with butter-flavored cooking spray. Layer apples, Sugar Twin, raisins, and graham cracker crumbs in prepared cake pan. In a small bowl, combine dry milk powder, water, and maple syrup. Mix well to combine. Evenly pour mixture over top. Bake for 35 minutes. Place cake pan on a wire rack and let set for 5 minutes. Cut into 8 servings. Good served warm or cold.

HINT: A self-seal sandwich bag works great for crushing graham crackers.

Apple Snack Bars - 3 Points

1 1/2 cups cored peeled and finely chopped cooking
apples -- about 3 small apples
1/4 cup chopped walnuts
1/4 cup mini-chocolate chips

1. Preheat oven to 350 degrees F. Spray a 9-by-9-inch cake pan with butter-flavored cooking spray. In a large bowl combine baking mix and sugar twin. Add applesauce, sour cream, egg, and vanilla extract. Mix gently to combine. Fold in apple, walnuts, and mini-chips. Spread batter into prepared cake pan. Bake for 30 to 35 minutes or until toothpick comes out clean when inserted in the center. Place cake pan on a wire rack and let set for at least 10 minutes. Cut into 16 bars.

Apple Crisp a la Mode

4 cups tart apple -- thinly sliced, peeled
3 tablespoons light brown sugar -- packed
1/4 teaspoon ground nutmeg
1/2 cup unbleached flour
1/3 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
2 tablespoons egg substitute, fat-free
1 cup nonfat vanilla frozen yogurt or ice cream

Coat an 8 x 8-inch-square baking dish with nonstick spray. Toss apples in dish with brown sugar and nutmeg, and spread aples evenly over dish bottom.

Whisk flour, granualted sugar, baking powder and cinnamon in a bowl. Add egg substitute and mix with a fork until crumbly. Sprinkle crumb mixture evenly over apples.

Bake at 400 until apples are tender and topping is browned, about 30 minutes.

Serve warm with frozen yogurt or ice cream.

These are really good after a Southwestern or Mexican dinner!

Apple Nachos

Ingredients:


1 C. brown sugar
2/3 C. sugar, divided use
1 C. apple cider
3 T. quick-cooking tapioca
2 T. + ¼ tsp. cinnamon, divided use
1/2 tsp. nutmeg
1/8 tsp. cloves
1/2 tsp. butter flavoring
1/2 C. raisins
1/4 C. sweetened dried cranberries
8 Granny Smith apples, peeled, cored and diced (1/2-inch)
18 98% fat-free flour tortillas (6 inches each)
Butter-flavored cooking spray
2 C. light whipped topping (or vanilla yogurt)
1/4 C. chopped pecans
Directions:
In a 3 1/2 or 4-quart crock pot, combine brown sugar, 1/3 cup sugar, apple cider, tapioca, 1 1/4 teaspoons cinnamon, nutmeg, cloves, butter flavoring, raisins and sweetened dried cranberries. Blend in apples. Cover. Cook on high setting for 2 1/2 to 3 hours or on low setting 6-7 hours. Preheat oven to 350 degrees F. Cut each tortillas into 6 wedges. Place on baking sheets and spray tortillas lightly with butter-flavored cooking spray. In a small bowl, combine 1/3 cup sugar and 5 teaspoons cinnamon. Sprinkle half over tortillas. Bake for 5-6 minutes. Turn tortillas over. Spray lightly with butter-flavored cooking spray and sprinkle with remaining sugar and cinnamon mixture. Bake until light brown, approximately 5-6 minutes. Cool. To serve, place approximately 1/3 cup apple mixture in a small bowl. Garnish with 5 cinnamon chips, approximately 1 1/2 tablespoons whipped topping (or vanilla yogurt) and 1/2 teaspoon chopped pecans.

1 teaspoon vanilla extract

Apple Topping:
2 teaspoons margarine
3 medium granny Smith apple -- peeled and thinly sliced
2 tablespoons sugar
1/2 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Combine flour and 1 cup milk in a large bowl; stir well with a wire whisk. Add remaining 1 cup milk and next 5 ingredients. Stir well; set aside. Coat a 9-inch pieplate with cooking spray; add margarine. Bake at 450 degrees for 1 minute. Remove pieplate from oven, and tilt in all directions to coat bottom. Pour egg mixture into pieplate; bake 5 minutes. Reduce heat to 425 degrees; bake an additional 20 minutes or until puffed and golden. Remove from oven; sprinkle with powdered sugar. Spoon Apple Topping into the center; serve immediately. Yield 8 servings

APPLE TOPPING: Melt margarine in a large skillet over medium-high heat. Add remaining ingredients; cook 7 minutes or until tender, stirring occasionally. Yield: 1/4 cup servings.

This is a variation of an Apple Crisp recipe I have used in the past. I used the MasterCook program to calculate the point value.

7 cups apple sliced, peeled
1/3 cup granulated sugar
2 Tablespoons all-purpose flour
2 teaspoons cinnamon

TOPPING:
1 cup quick cooking rolled oats
1/4 cup brown sugar, packed
1 Teaspoon Cinnamon
1/4 cup margarine, imitation

1. In small bowl combine 1/3 cup sugar, flour and 2 tsp cinnamon. Add to fruit and toss. Place in baking dish.

2. TOPPING: Mix rolled oats, brown sugar and cinnamon. With pastry blender or two knives, cut in margarine until crumbly. Sprinkle over fruit mixture.

3. Bake at 350 for 55 minutes or until fruit is barely tender.

Serves 6

TOPPING:
9 gingersnap cookies
1/4 cup sugar
1/4 cup packed light brown sugar
2 Tbl. flour
1/4 cup butter or stick margarine, cut into pieces
FILLING:
3-1/2 cups chopped peeled Granny Smith apples
3-1/2 cups coarsely chopped Bartlett pears
1/2 cups chopped pitted golden raisins
1/4 cup molasses
3/4 teasp. ground cinnamon
1/2 teasp. ground ginger
1/8 teasp. ground nutmeg
1/8 teasp. gound cloves
Preheat oven to 375 degrees.
TOPPING:
Place cookies in a food processor; pulse till coarse to measure 1/2 cup. Combine crumbs, sugars, and flour in a bowl; cut in the butter with a pastry blender or 2 knives until mixture is crumbly.
FILLING:
Combine apple and remaining ingredients in large bowl; toss well. Spoon apple mixture into an 8" square baking dish or a 1-1/2 qt. casserole. Sprinkle with topping. Bake for 45 minutes or until bubbly. Makes 9 servings.

1/4 cup sugar
1/4 cup packed light brown sugar
1/4 cup chilled butter or stick margarine, cut into pieces

2 teasp. grated orange rind
3 Tbl. orange juice
Preheat oven to 375 degrees.
Level flour into measuring cup with a knife. Combine flour, cornmeal, sugar and brown sugar in a bowl; cut in butter with 2 knives till mixture is crumbly.
Combine apple and remaining ingredients in a large bowl; toss well. Spoon the apple mixture into an 8" square baking dish or 1-1/2 qt. casserole. Sprinkle with the crumb mixture. Bake for 45 min. or till golden brown. Serves 9.

Don't know if you got your recipe yet or not, but here is a very good apple crisp...if you are looking for other recipes, I have a recipe thread going in the "Depression and Weight Issues" forum...I think people are afraid of us Anyway, these are recipes I have tried and enjoyed while OP.


APPLE CRISP
Serves 8

This old fashioned dessert is good served warm or cold.


Hi Girls, here is a good treat once and awhile...only 110 calories per serving, I separate the servings right away into 8 small dishes so my portions are right. You can get carried away if it is all out at once



INGREDIENTS
4 c peeled, sliced apples
1/4 c water
1 tbsp firmly packed brown sugar
1 tbsp lemon juice
2 tsp cinnamon
1/2 c oats (quick or old fashioned)
2 tbsp walnuts, chopped
1 tbsp packed brown sugar
1 tbsp soft margarine

DIRECTIONS
1) Preheat oven to 375° F.

2) Combine first 5 ingredients in a mixing bowl and mix well.

3) Arrange apple mixture in an 8-inch by 8-inch baking dish that has been sprayed with non-stick coating. Combine remaining ingredients and sprinkle over apples. Bake for 30 minutes or until apples are tender and topping is lightly browned.


Preparation and Baking Time: 45 minutes

Default Apple fantasy Dessert

Hello
I found this recipe on the fatfree.com site that someone else suggested I tried.
I have no idea what the calories etc are but this dessert contains no fat at all. It is sweet and lovely with either custard or Low fat Greek style yoghurt.
Here goes then.
:apple:
2/3 cup flour
3 tsp baking powder
1/2 tsp salt
4 egg whites
1/2 cup sugar
1/2 cup brown sugar
3 tsp vanilla
3 cups apples chopped fairly small can leave skins on.
Beat eggs. add sugar and vanilla and beat well. Add dry ingredients and mix. Dump in apples and stir until evenly distributed. Bake in deep dish at 350F 180C for 45 mins.

My husband has a sweet tooth and he loved it.

1 box Spice Cake Mix -- Duncan Hines
1 can Apple pie filling -- 21 ounce
1 large egg
2 egg whites
2 teaspoons confectioner's sugar

Preheat oven to 350F. Spray a 10-inch Bundt pan with nonstick spray.

With an electric mixer on low speed, beat the cake mix, apple pie filling, egg and egg whites in a large bowl until moistened, about 30 seconds. Increase the mixer speed to medium and beat until well blended, about 2 minutes. Pour the batter in the pan.

Bake until the a toothpick inserted into the cake comes out clean, about 40-45 minutes.

Cool in the pan 20 minutes.

Remove from the pan and cool completely on the rack.

Sift the confectioners sugar over the top, just before serving

Tip: this cake can be made ahead and refrigerated up to five days or frozen up to one month (just thaw the cake overnight in the refrigerator). Wait to sift the confectioners sugar over the top.

Nancy - Here is a recipe that I got off the WW Community swap. My DH LOVES this, and I liked it pretty well myself.


CJ's fried apples

servings | 4
estimated POINTS per serving | 1

4 medium semi-tart apples(mcintosh, honey crisp)
1 package butter buds
3 packs Splenda
3/4 tsp cinnamon
1/8 tsp nutmeg
1c. boiled water

core, peel and slice apples.
put hot water and butter buds in sauce pan and mix. stir in spices and splenda.

add peeled, cored sliced apples and bring to boil stirring occasionally. reduce heat and cook for 7-15 more minutes depending on hardness of apples or to taste.

Notes:
If you are using small apples, use more.
I do not care for granny smith with this recipe, although your own milage may vary.
do not use sweet soft apples like delicious.

you can adjust this recipe splenda and spices to your taste.

I have not tried this one yet but it sounds good and looks good in the picture! It sounds perfect for the upcoming fall season. I have a ton of apple recipes so I will send more!

4 cups sliced and peeled apples
1/2 tsp grated orange rind
1/3 cup orange juice
1/2 cup sugar
1/3 cup regular oats
1/4 cup all purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. salt
3 Tbsp. chilled light butter ir reduced calorie stick margaarine--cut into small pieces
6 Tbsp. frozen reduced calorie whipped topping

Preheat oven to 375. Place apples in an 8 inch square baking pan and sprinkle with orange rind and juice. Combine sugar and the next five ingredients in a bowl and stir well. Cut in butter with a pastery blender or two knives until mixture looks like coarse crumbs. Sprinkle over apples and bake for 40 minutes or until apples are tender and topping is light brown. Top with serving with a Tbsp of whip topping.

Makes 6 servings

apple pie
4pts per serving/ 8 servings total


1 cup all-purpose flour
2 tsp sugar
3 Tbsp reduced-calorie margarine, chilled and cut up
2 Tbsp water, or more if necessary
4 medium apple(s), McIntosh, peeled and thinly sliced
1/4 cup sugar
1 Tbsp cornstarch
1/2 tsp ground cinnamon
1/3 cup uncooked old-fashioned oats
5 Tbsp all-purpose flour
2 Tbsp sugar
2 Tbsp reduced-calorie margarine, melted


Preheat oven to 400ºF.


To make the crust, combine 1 cup of flour and 2 teaspoons of sugar in a large bowl or food processor. Add 3 tablespoons of chilled margarine and process (or mix together with your fingers if you do not have a food processor) until mixture resembles coarse meal. Add cold water, one tablespoon at a time, and process or mix until a manageable dough forms. Press dough into the bottom and up the sides of a 9-inch pie plate. Pinch the edges to form a decorative rim; set aside.


To make the filling, combine apples, 1/4 cup of sugar, cornstarch and cinnamon in a large bowl; toss to coat apples. Arrange mixture in prepared piecrust.


To make the topping, combine oats, 5 tablespoons of flour, 2 tablespoons of sugar and melted margarine in a small bowl; sprinkle over apples.


Bake until apples are tender and crumb topping is golden brown, about 45 to 50 minutes. Allow to cool for 30 minutes before slicing into 8 pieces

Default Apple Cinnamon Yummy!!!

I received this off of the weight watcher community watch. I think. Sorry.

1 apple
1 packet of sweetner
cinnamon to taste.

Cut up apples in chunks in a bowl and put sweetner and cinnamon.
Mix together.


I used splenda as the sweetner. It is so good and my kids loved it. Next time
I'm going to heat it up. Apple pie ww style.
