Buffalo Chicken Salad
 
Good morning everyone, hope everyone is having a FUN, RESTFUL Sunday. I am at 173.6 (-1.6 for the week) happy with that but yesterday was a bit lower, but today that's what it is so I'll take it . . .

Surrender here is the Buffalo chicken:

Northern Buffalo chicken - really simple - cook a chicken breast (i season with only salt and pepper) Cut into strips or cubes, and toss in buffalo sauce (I use Nance's - I used to make my own, but the recipe calls for LOTs of butter, so I get a low-fat sauce now) and place over salad greens and tomatoes. You can then use bleu cheese dressing, but i just add two tablespoons of fresh, crumbled bleu right over it. And enjoy!!

I think it may have come from dcap . . . not sure I can't remember

When I cooked the chicken I baked it and used sea salt and garlic pepper (love my garlic) I couldn't find Nances and used Stubbs (ok on the flavor but a bit spicy for me) will keep my eyes and ears out for one NOT quite so HOT . . . and I like spicy . . but OOOOOOO SO GOOD!!!

Congrats to all the losers, maintainers, and those getting up to try again!

I tracked my calories last night for the first time in a LOOOONNNNGGGG time - and I ended up 1600-1700. I know that having to track made me WAY more mindful - so maybe that's a good thing! I wonder if I can lose on this amount.... I hope so!

:coffee2: ladies! it's going to be a long one for me, and they are threatening snow... again....

I hope so too! I'm excited that my work schedule this week gives me Mon-Fri off, which means I get to go to the gym 5 days in a row. YAY! :D

I also ordered a ProForm Elliptical to have at home and it should be here around the 5th. Super excited! :carrot:
