Default Salt

This morning I'm not even looking at the scale. Last night I made a wonderful dinner that had too much salt in it so I know the scale will be higher today. (I once gained 4 pounds in the space of a few hours from eating salty beef jerky).

I wanted to tell you about this meal though, it is wonderful. It is made from leg of lamb. You cut the meat up into cubes and then marinate it in lemon, olive oil, salt, pepper and a bunch of onions sliced and then separated into rings. There are 2 teaspoons of salt in the marinade 1/4 teaspoon of pepper 2 tablespoons of olive oil 2 tablespoons of Lemon juice.

Then you skewer the meat, pour a little heavy whipping cream over it and broil it. Skewer separately bell peppers cut into strips, tomato (use meaty ones), and mushrooms. Broil them too.

I pour the marinade with all the onions into a casserole beneath the meat and then when I'm about to serve it I remove all the meat and veggys from the skewers and put it into the lemon, onion, cream etc mixture at the bottom of the casserole so it too can absorb some of the flavor.

It is really yummy. Supposed to be served over rice pilaf, but I made that part for the family and didn't eat any of it.
