I use Panko also called Japanese bread crumbs. They have a more coarse texture and seem to bind better in small amounts.

I like brown meatloaf, the red always seems too sweet to me. I am still working on a good recipe that doesn't make too much.

I love meatloaf! I find it's sort of a DIY type recipe. Just get the basic ingredients and add to it whatever you want. One of our favorites is mexican/taco style. Add to ground beef some chopped onion and bell pepper, a can of Rotel tomatoes, some bread or cracker crumbs, a packet of your favorite taco seasoning and an egg or two. Add salsa on the top and bake. It's delicious!

I make a mexican flavor meatloaf and my husband loves it

one pacakge of lean ground beef and one package of lean ground turkey mixed together
1-cup diced onion
4- jalepenos diced
2- habeneros diced
1-green bell pepper
1/2 cup- light sour cream
1-cup salsa
2 egg whites
2- slices of 45 calorie whole bread ( I put it in the blender to make it fine like bread crumbs)

I also use a few dashes of cayenne pepper, paprika, mexican chili powder, red crushed pepper flakes, fresh ground pepper, chipotle seasoning, mrs. dash spicy seasoning, garlic salt,onion powder.

put it all in a bowl mix together put in pan bake at 375 for 30-45 mins you can top with a little salsa as well!
