I've been on vacation from work for the past few weeks, and tomorrow is my first day back. That always makes it easier to stop the snicky snacky eating, for me. My goal is 235 by V-Day. Watch me gooooooo! :) |

Sunday in review...
Today was also a bust day... my brother cousin and I ordered chinese food. I had shrimp with broccoli, shrimp fried rice, and a GIANT egg roll. I also ate ANOTHER one of those cinnamon swirl buns! ::sigh::
However, bro and cous left tonight. I love them dearly, but it's a relief to see them go in terms of my vals day challenge. So it's time to buckle down... I have no excuses now. I'm trying a new strategy where I prepare and package out all my meals for the week every Sunday and put them in tupperware containers. This is to overcome one of the major stumbling blocks that I always have when dieting... eating crap from off the streets when I don't have the right food at home to eat. So as soon as they left, I whipped up a storm. I made some mushroom, bleu cheese & bell pepper quiche muffins (for breakfast), a shrimp & spaghetti squash stir fry (of lunch/ dinner) and baked tilapia (of lunch/ dinner). I wanted to make a bok choy & mushroom stir fry to go with the tilapia, but I didn't find any at the grocery store yesterday. Tomorrow I'll try another grocery store in my neighborhood and then whip it up in the afternoon. So right now I have breakfast, lunch and dinner sitting in my fridge for Mon-Fri. Thankfully I can eat the same thing for like weeks in a row and not get tired of it. I know some people can't (like my dad), and that would make this plan a little bit harder. I hope its going well for all you folks on the vals day challenge :) Best of luck! And some will power dust, cause it never hurts: :dust: |

I went over my calorie limit yesterday but I am going to workout extra today to counteract the effects of it.It still wasn't horrible it just wasn't were I wanted to be.

scales appear to be moving down!! I love it!! I didnt exercise yesterday or the day before but I am back at it today. I was given a great chicken soup recipe and am making it again today.Cant wait to see if I can reach or maybe even exceed my goal.

i have been moving for the last 3 hours,housework and exercise,one way or another I have been moving so I think I have made up for the little bit that I over ate and then some.

I got up at 5 this morning to work out! Haven't done that since I had kids! Hopefull I can keep it up. I was thinking 30 minutes of cardio M,W,F 30 minutes of weights T, TH and then some cardio in the evenings when the hubby can watch the kids.

Ergh. I'm feeling all incredibly munchy. I want to eat everything within sight. Instead I just downed a quadruple shot of espresso. Guess who will have trouble sleeping tonight?

Recipe: Blue Cheese, Bell Pepper & Mushroom Quiche Muffin
Here is the recipe for the muffins:
6 Egg White 3 Whole Egg 1.5 cups Bell Pepper & mushroom mix 3 0z Bleu cheese 3 tbsp Ground flaxseed 6 tbsp Heavy Cream salt, pepper, paprika, & any other herbs & spices you like olive oil cooking spray to grease muffin tins. Beat eggs, flaxseed, heavy cream & spices in a bowl. Finely chop bell pepper, mushrooms and bleu cheese. Combine in a bowl. Fill each muffin pan 1/4 way with the egg mixture. Layer on the bleu cheese/ mushroom/ bell pepper mixture. Top with another layer of the egg mixture. (The reason I did this is because I was afraid that if the blue cheese directly touched the bottom of the muffin pan, it may burn while in the oven. I creates more work, but I just wanted to be on the safe side. If you choose to stir all the ingredients together and it doesn't burn in the oven, let me know and I'll adapt the easier technique) Bake for about 15 mins at 350-375 degrees. Note: I actually got 12 muffins out of this recipe (my muffin tins are really small), so I eat 2 muffins as one serving. If you only bake 6 muffins with the recipe then a serving size will only be one muffin. Serving size (2 small muffins): Calories: 168 Carbs: 6g Sodium 180mg Fat: 7g Cholesterol: 73mg (I plugged the muffin into my Daily Plate- thats how I came by those numbers) They microwave well if you cut them in four before you put them in the microwave oven. I had one this morning- It was delicious! |
