Thanks, purplefirefly! (is that firefly as in Serenity?) I'm trying to not make it a choice but there's always that feeling it's not fair I have to get up so early and exercise so much -- and it's only going to get worse (my husband's a teacher and the girls are still in elementary school so in a month, I'm going to be the only person in the house who's got to get up and go anywhere at all).

...

I am in the same position, exactly. I do find that after a couple weeks straight of getting up I feel more awake and it's easier. I changed my workout times because it was simply impossible to make myself get up every morning that early, now I just have to do my Jillian before noon...think i can swing that this summer

I'm not sure about eggplant, but I am up for the challenge. I have no idea what to do with it either, so I will need the recipe help.

Curious... possibly weird question...
Does anyone else feel thinner when they eat right and exercise?
I feel much better about myself when I stick with my plan and actually tend to feel skinnier, whether I have lost weight or not, when I keep with it. If only I wasn't a compulsive eater... when food is around... I eat (but the only food that is around during the day is the food I bring with me, so that helps solve that problem... once I get home is a different story...).

What exactly was the veggie challenge again? And when does it start?

Well, I have to have the guy push me off - my legs turn to rubber and I can't jump myself. After I am airborne, though, it's all good!

Several people mentioned eggplant. Ok with me for that as the first choice - I've only eaten eggplant parmesan - would eat it more if I knew what to do with it. Don't even know how to prepare it.

This recipe is one of my ALL-TIME FAVORITES!!! Makes great sandwiches, too.
BROILED EGGPLANT

1/2 cup finely chopped plum tomato (I use a whole canful)
3 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil
1 small garlic clove, crushed
1 small eggplant (about 12 ounces), cut into 1/2" slices
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Preheat broiler. Spray broiler rack with nonstick cooking spray. In small bowl, whisk together tomato, vinegar, basil and garlic. Arrange eggplant slices on prepared rack; brush slices with some of the tomato mixture. Broil 5-6" from heat 8 minutes, until lightly browned. Turn slices; brush with more of the tomato mixture. Broil 3-5 minutes, until
lightly browned. Transfer slices to serving bowl; keep warm. Add salt and pepper to remaining tomato mixture; stir to combine. To serve, pour remaining tomato
mixture over eggplant slices.

EACH SERVING PROVIDES: 1 1/4 Vegetables

PER SERVING: 33 Calories, 1 g Protein, 0 g Fat, 7 g Carbohydrate, 143 mg Sodium, 0 mg Cholesterol, 2 g Dietary Fiber

VARIATION:

Eggplant slices can be prepared on a grill. Spray grill with nonstick cooking spray. Place
grill rack 5-6" from coals. Prepare grill according to manufacturer's directions.
Follow steps 2-4 above.

Well I used to be quite good at finding things on the net. Don't try this at work (too many porn hits). The actual answer came from a teen questions site. Kind of figures though, doesn't it?

it sure does sound like something a teenager would try to tell his GF to get her to do something lol

that and "if you jump up and down after you won't get pregnant" lol

ceegee 04-29-2008 03:59 PM

since so many are into it, and I need to burn off those extra 6 calories, we shall start the exercise challenge today! Start earning cash for fabulous prizes! (again, I feel the need to point out I will NOT be giving out real cash or any real prizes, lol!)

 I do! I have a lot more energy and am not sluggish and sleepy in the afternoon as well.

I feel so much better about myself when I stay OP and do my exercises. I have so much more confidence and feel downright sexy!! Another reason not to stray off my goal.
