Menu:

B-Coffee w/Splenda & Cream
Special K- 1 Cup 2% Milk

S-1/3 cup Roated almonds w/Salt
green tea w/splenda & cream

L- 2 oz Chicken breast w/Provolone cheese & Mushroom (leftovers)
1/2 cup baby carrots-cooked

S- Apple

D- Roastbeef-lean
1 cup Mashed Cauliflower
1 Cup brocoli
3 tablesppons gravy

Totals
1433 Calories
114 carbs
116 protein

Mashed Cauliflower recipe:
FAUX MASHED POTATOES

From fresh cauliflower:
1 small-medium fresh cauliflower, about 16 ounces
1 tablespoon water
1 tablespoon butter
1-2 tablespoons heavy cream
Salt and pepper, to taste

Chop the cauliflower into small pieces and place in a large covered casserole dish. Add 1 tablespoon water; cover and microwave on HIGH 5 minutes. Stir and cook another 5 minutes. Let stand covered 5 minutes; drain briefly. Place in a food processor along with the butter and heavy cream. Process until smooth and creamy, scraping down the sides of the processor occasionally. Season to taste with salt and pepper and reheat in the microwave, if necessary.

Makes about 4 servings or about 2 1/4 cups mashed cauliflower
Do not freeze

From frozen cauliflower:
16 ounce bag frozen cauliflower or I head of fresh
2 tablespoons water
1-2 tablespoons butter
Salt and pepper, to taste

Place frozen cauliflower in a casserole with a lid; add the water. Cover and microwave on HIGH about 8-10 minutes, until very tender, stirring occasionally. Drain well and put cauliflower in a food processor. Process until smooth and creamy. Remove to a serving bowl and season with salt and pepper and butter. Reheat in the microwave, if necessary.

Makes about 4 servings
Do not freeze

Per Serving: 78 Calories; 6g Fat; 2g Protein; 5g Carbohydrate; 3g Dietary Fiber; 2g Net Carbs

Aww Roni, you are so sweet, I'll totally be sad if we arent on the same team next time around. I think the one chat thread is gonna be good though. Cuz lets face it...how many times do we all read the other teams threads anyway? I know I do!

Oh I just LOVE driving all the way over to campus, paying for parking, walking across campus in the freezing cold only to find out class has been cancelled! good times!!

Grrrrrrrrr I hate when that happens. It used to piss me off too gf because I have to drive 35 minutes or more to campus...when I used to go. I do miss school though. I gotta get the loan out of default and maybe I can go back next fall. Something to strive for.

I'm still pondering going for my masters....one more year of student loans...EWWW! I think if you can do it you should!

Ugh...I'm STARVING today!! I want the freedom of being on a lowcal plan but man the first few days are rough. On lowcarb I'm rarely if ever hungry and I miss that! It makes me so tempted to just do lowcarb but I just know there are too many days from here till newyears where sticking to that strict of a plan is gonna be impossible. Just gonna have to stick it out, it'll get better! LOL! Plus I think if I had more groceries maybe it wouldnt be so bad. Just need to incorporate more proteins I think.

Okay enough rambling, I need to be reading tax but I cant seem to get motivated. Plus GH is on! LOL!

You can't concentrate on studying because you are hungry! dah! LOL!

I watch GH too! It's so good right now. It's my fav soap! I am so loving Liason right now! (Jason & Elizabeth). Girl, I also post at a Soap (and other things) forum if ya want the link. I'll pm it to ya.

Hi everyone,
Of course I've changed my mind yet again. Reading all of the information about the next challenge gets me excited. I guess I have time between now and the deadline to make a decision. I'm thinking that will be happening pretty soon though.

GH...I used to be a GH fan then switched over to Guiding Light. My co- worker tapes GH , no not TIVO, I mean tapes it on a VHS so she can watch it at night once the kids are asleep. I still remember a lot of the characters from when I used to watch it. Right now I don't watch any soaps except these reality shows I'm into.

Yay!! LOL...I'm actually excited to see that you might just stick with us Shay. I really think making it all about the support and less about beating the other team will help ALOT of us. Me especially because i get so darn upset with people for not supporting their team LOL! I think it'll just be nice to have that big group and still have friendly competition but mostly SUPPORT.

LOL @ the vcr...thats how I still tape! LOL!

LondonJulz checked in on the poll thread and I really like her idea of those wanting to remain with their teams can then just filling the empty slots up to a designated number for each team.

Me too Shay. I'd be really disappointed and less motivated to participate if I couldn't remain with THIS team right here. I do have a soft spot for Julz too. I admire how she took charge over the Black team and kept it going when the former team leader abandoned the team. She's a funny gal too! I think the ONE chat will be a good thing because like a couple of us have mentioned, a lot of peeps don't even participate in the chat, which is my favorite part...obviously, LOL!

BTW, I HATED the mashed Cauliflower, YUCK! I totally didn't eat it. I'll just have to save up my carb intake when I know I want mashed taters. There's just NO substitute there.

Diva--I have a soft spot for LondonJulz too for two reasons 1. I post with her on WW@ home thread and 2. She is a Gator fan!!!! I laughed so hard when I read that about the mashed cauliflower.

I'm so behind with my studying but I am owning it. I will get on top of it. I am slowly chipping away at it.

Off to make my lunch for tomorrow.

Hi ladies. Sorry I haven't posted in a few days. I planned on restarting my diet after Thanksgiving, but then I realized that I had 3 days worth of leftovers. I can officially say that I am sick of eating anything refined or bleached (well for now at least).
