  • aud, I really need to try the cauliflower "potatoes" sometime. Do you have any tips to make it great?


    I did the one-minute muffin this morning and HOLY COW it was good! Easy peasy too!
  • My one thing.... Must have.... pepperoni probably. I can eat a little pepperoni stack sometimes and do just fine. Take them to work for snacks. Also mini burgers. I'm prone to cooking up a skillet full of little burger patties for "run to" snacks when time gets tight.

    Rho - that's awesome. Whether or not you can afford the new clothes, I'm glad you have the problem of needing them. I'm quite jealous. I have 2 plastic tubs of things I wore less than a year ago. I'm about 10 lbs from when they fit last. I'll have a new wardrobe nearly in 10 lbs. Motivation.

    Today's been good. Home alone, working on cleaning out stuff. DH fixed a nice breakfast - bacon and eggs, plus coffee and cream. Lunch was my famous cabbage stir fry (well, not famous, but good). Had favorite atkins bar in afternoon for snack. Then supper was can of vienna sausage, mayo and hot sauce. I just didn't want to cook again.

    I just figured up when my 2nd job starts, I'm going to be living at work and in car. I have to plan ahead well for those days or I'll fall big time.
  • I throw a close of garlic in my cauliflower when I steam it and blen it right in and I like it with the chive cream cheese (not a lot just enough that it blends up) I go for easy - occasionally I will throw some cheddar in and let it melt in...

    Kel work up a list of things you can grab quickly - and maybe keep a little cooler ready that you can throw some meat roll ups, cheese squares, your pepperoni, maybe a small salad with a protein in a container with a fork all ready to throw them in and go.

    Do you have the crockpot book Dana did? That could be a lifesaver for you - meals done when you get home and built in leftovers...someone was saying they did the chicken with horseradish sauce the other day and loved it - I have to try that one out.

    What is the second job? Did this come about when I was sick and missing things??

    I know I am weirdly cheap - I order an iPhone and then say I'm too broke for new clothes lol. And I got a new to me car and now have to get a new washer and dryer and the fridge and stove won't hold on for many more months I'm sure. (The joys of having things that are all old and decide to die at the same time)

    Actually though I will get a few things to hold me over cause I can't see buying more than that when I have a long way to go. Right now it looks like this week is crazy till Wed. So hopefully I'll make it shopping on Wed. I think I just need some around the house fleece pants and a pair of jeans and I'll be good for a while longer. Wash and wear literally. I think my tops will last awhile longer ..
  • I use white pepper/garlic salt in the cream cheese base and then when whipped, cover the top in paprika. So yummm. I dip the raw either in ranch or plain sour cream. Not sure why I can digest all this cauliflower easily - and not pepperoni anymore. Love so, but get just wicked heartburn from even a few slices.

    I stepped up the exercise on these last few days off - actually walked 4 miles Saturday - and only sat down ONCE! Went a bit OP yesterday but right back at it today. Forcing myself to try to nap this afternoon - starting nights tonight 5:30pm-5:00am, but just got word we're still on reduced schedule with days getting off at 5 hours (thank God) since I still woke up this morning at 5:00am like a rooster!

  • Rho, I'll book an overseas holiday and still complain that I can't afford new clothes. I've just never been into fashion and stuff so they don't excite me.

    I feel so much better being on track again. I have to update my piggys and mice. I ate off plan at lunch yesterday when I was out with friends and the place we were going to was unexpectedly shut. I'm limited a bit by having to eat strictly gluten free. Got stir fry veges and chicken (good) but in a too sweet sauce and I ate about a cup of rice. Oops. On the plus side, I was determined not to let myself give in to any cravings that it might inspire and I didn't, so that was good. Also, I didn't enjoy it, it was so sweet, I'm not tempted to eat it again.

    Will you have access to a microwave at work kel? I like taking little frozen containers of leftovers, they keep my cooler bag cool (saving me from having to pack an icepack) and are fast to heat up.

    ETA though what does excite me is the thought of being able to go through my wardrobe of stuff that doesn't fit! I have clothes that I wear now that I'm not dead keen on but will hopefully not be wearing long, also a bunch in various smaller sizes that I want to wear, have become too big and then give away. Then I can start from scratch building a nice wardrobe. I used to buy tonnes of stuff when it was cheap, so I have quantity of rubbish clothes (t-shirts and the like), but I'd like to have less items and better quality / more versatile.

    I'm feeling nicely settled back into this w.o.e. I tried mayo on my hard boiled eggs this morning - I'm trying to ease out of the hummus on hard boiled eggs because it's 10g carb I could use better elsewhere - and the mayo was ok. I'm not a huge fan, but I liked it enough. I'll try another brand too I think (unfortunately the brand I remember liking as a child contains gluten). I might try something totally different for brekky though, like dinner left overs.

    I have to add in another mouse for yesterday, yay :-)

    And LOL, I'm back to my 3fatchicks starting weight :-) *waves hello to 170s again*

    which mayo has gluten? I'm just curious cause I'm G-free too!

    did you mix a little mustard with your mayo? That seems to help the taste, for me anyway.

    I've had a OMM every day now since Sunday and I'm still in ketosis

    I'm really missing my diet cranberry juice in the evenings so I see a trip to the store in my future for tomorrow
  • AnaBee do you like hot sauce - try mixing some Tabasco chipotle in the mayo - not a lot - or I like Dijon and mayo mixed together too..

  • I'm in Australia so it's probably not a brand you guys get Vi, but "Praise" had gluten and I think one of the kraft ones did too (but even when it's the same overall parent company, often the products have different formulations, Old El Paso re-fried beans were super different, it really threw me when I tried them on a visit to the states). Lol, I stood in front of the mayo range for about 10 minutes last night reading labels. Trying to get the best combo of carb and decent ingredients (I also get a bit picky about oils since I was trying to be mostly paleo, so I skipped the ones with unidentified vegetable oils)

    You've reminded me to try my ketostix! I got them just before I started my bad eating so I haven't had a chance to try them yet. I've been feeling great so it didn't occur to me that I might already be in ketosis. No low carb flu in sight this time, I think it has REALLY helped cutting the metformin back to one dose in the evening.

    Oh and I called for my test results because I'd been so super tired and apparently I have practically no iron stores at all. So as of when I get to the shops tonight, I will be on iron too

    Ana, I love using the Ketostix. They validate what I'm doing. That may sound strange, but it helps me to keep going. You can also cut them in half to save on money

    I've been having a of a time getting/staying on track with these new hours . . . but the good news is that it's getting better and just LOVE resuming my old job. Worked 3pm to 4am yesterday (this may happen every Tuesday for awhile) and writing internal memo that fatigue just maaaaay be a trigger auddie ole girl!! Ya think???? lol < Love dizzy smile! So far my OffPlanness has just stalled me and still getting lots of exercise (walkingwalkingwalking) so just climbing back in the saddle.

    Great to see everyone doing so good . . . I had the one minute muffin some time over the weekend (love) and just realized I have to cancel my scheduled colonoscopy - can't have flax beforehand! (Can't say I'm sorry-wasn't really looking forward to it lol) Good thing I was reading along here - would have wasted a vacay day!

    aud, it sounds really tough with your job and the hours but you've got a great attitude and I think posting here really helped me when I was struggling with my eating. It helps being around people for whom low carb is the norm and not some freakish fat diet that's going to destroy your health Sigh.

    I went to cancel my gym membership because I wasn't using it and couldn't be stuffed making myself but the owner offered to cut the cost by $15 per month and gave me a free personal training session which I did this morning. Sheesh, do my legs hurt, lol. But the trainer was great and showed me all the machines and I feel motivated again. It's only a ten minute walk from my house, I'm sure I can find some time in my very busy TV watching schedule
  • Aud, you really do have a great attitude and I know you can make it work for you. Are you just having a screening colonoscopy or are you having problems. I didn't realize you couldn't have flax beforehand. gotta love thos one minute muffins LOL!

    Ana, I agree with coming here helps. It's great to have people to talk to who won't judge you for eating this way. I love your little no no smiley. I'm going to try it and see it it works

  • Isn't it adorable Vi? It took me a while to work them out but I love the smileys! It's so exactly how people are when you tell them... so I don't bother, I just say I focus on meat, veges and a bit of dairy and nuts.

    Oh and news on the mayo front! I bought a jar of tartare sauce last night (do you get that in the states? It's a lot like mayo but goes with fish & chips. It's more tart than mayo, though mayo is the main ingredient). It was GREAT with the hard boiled eggs, so there you go, I've cut 7-8g from my standard breakfast, depending on how big a dollop I have, lol.
