Gramps may be getting back to the Nursing Home in the morning so not making the trip tonight - which is good. It's really cold here today, but still going to try to get a walk in - even in the dark lol - really slept today, so this is my morning while the Fam is already winding down.

Frying fish tonight . . . and maybe some french fried sliced turnips?

DINER "POTATOES"
1 pound fresh cauliflower, shredded
2 tablespoons butter, melted
1 small onion, minced, 2 1/2 ounces
4 ounces cheddar cheese, shredded
2 ounces parmesan cheese, shredded, 1/2 cup
1 teaspoon salt, or to taste *
1/2 teaspoon pepper
1/3 cup heavy cream
2 tablespoons cold butter

Mix the cauliflower, melted butter, onion and cheeses in a greased 9x9" or 7x11" baking dish. Season with salt and pepper. Mix in the cream and dot with cold butter. Bake at 350º for 40-50 minutes until crusty and brown.

Makes 4-6 servings
Can be frozen

* I think that 1 teaspoon makes them a little bit too salty. I'd start with 1/2 or 3/4 teaspoon.

Per 1/4 Recipe: 384 Calories; 33g Fat; 16g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs
Per 1/6 Recipe: 256 Calories; 22g Fat; 11g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

I substituted shredded cauliflower and cut back a bit on the butter since cauliflower wouldn't absorb as much liquid as potatoes. I think these would be nice for breakfast or a brunch. Aud those look yummy will have to remember that one - I love her recipes - I made Parmesan Herb Chicken and mushroom gravy from there tonight was good

I wrote up a whole big post this morning as just as I went to hit send my iPad crashed and I lost it all - and was so annoyed that didn't get back on till a while ago lol. ..

I had to get a belt today because my jeans are almost falling off - this way I can get them back up around my waist and wait a little while longer before shopping for new clothes.

So let's talk Food Processors - what do you all have - mine is between 25 and 30 yrs old and tired so I'm looking for new - for shredding cheeses, cauliflower, slicing meats, chopping or slicing or shredding other veggies too.. So I'm thinking it might be a future purchase

rho, that's awesome! Loose pants are a good sign! I have a ton of jeans I don't fit into anymore after pregnancy, I can't wait to get back into them (I am ashamed to say I am living in my yoga pants and maternity jeans still)

190.8 today! I didn't eat enough yesterday, I had a really late lunch and skipped dinner completely. Also not sure I had enough water. I'll have to be better at that

I found a low carb steak marinade recipe, we're making dinner tonight and having my mother in law over. Should be fun!

Nothing wrong with yoga pants - my normal around the house wear is the pj bottoms that have ties - I find t-shirts that go with the colors and wear them that way - but it is too cold now so jeans and sweaters are warmer lol. probably by the time it warms up I'll need new ones though. I am seriously all about comfort now

I'm thinking I may make the challenge - I'm so close - hope I don't jinx myself lol.

So Wednesday starts a new challenge and my plan is to start really REALLY planning shopping and doing menus for the week and organizing a folder with the different meals we love - I have found so many great recipes and I have realized that I forget some until someone mentions it and I think wow we loved that and haven't had it in ages. Not to mention I never do a recipe exactly as written lol.

I won't go back to total induction (want my nuts and a few other things) but I am tightening things up again and playing with recipes. I'm also going to try to be tighter on the food budget while I am doing this ... It's just the two of us but dang it is adding up lol.

rho, congrats! You are super close! I find our grocery shopping trips do get a lot more expensive while I'm on Atkins as well.

I'm 190.4 today, slowly getting there but oh man this weekend is messing me up. I'm not normally this bad. I thought it would be no big deal to have a rye and diet on Thursday night and Friday night. I still lost, but the plan was to stay on track because I wanna hit this goal!

Then last night we had my mother in law over for dinner and she brought us a bottle of red wine as a Valentines Day gift. I intended on saving it for when I'm off induction but she suggested opening it up to have with dinner. I ended up having two glasses because her, my husband and I were all drinking it and started getting all riled up talking about other family members haha. This morning my ketostix still show me in ketosis though.

Now tonight we're supposed to go over to our friends house for dinner (they offered to make us dinner). We accepted because we haven't seen them in over a month and they want to meet our daughter. They eat pretty healthy but they are making chicken fried rice and a veggie on the side. I'm going to have a tiny amount and stock up on the veggies and say no to dessert. It'll be easier to explain the diet I'm on when I'm there and face to face with them.

I'm so close to goal, hopefully if the dinner tonight messes me up I can be back on track this week!

191.8 today, I think I'm retaining water from all the bad eating since I know I can't logically gain over a lb over night.

It's a little depressing because I even saw 190.2 on the scale yesterday after breakfast and before my shower. I even behaved at my friends since they kept the rice seperate and I just had chicken with a home made salsa they made and roasted veggies.

I found I can't drink anything - even wine it stalls me out completely. I was trying the small glass a day for heart health but had to stop ... I don't like wine that much so it was like drinking medicine anyway so wasn't hard to give it up lol

I think the wine is mostly to blame, it has so many carbs in it. Usually when I do something good/bad it shows up in my weight two days later and it was two days ago.

Rho, you are doing GREAT! It's awesome, and so inspiring to me.

Stephanie, that sucks that the wine pushed you up again but you did great staying on track at your friends and it's kind of good to have these experiences so you know what you can't have. I gather the rye & diet coke was all ok?

TOM for me but I've been losing still (a bit up and down, but losing) so pleasepleaseplease for a whoosh by the end of this week! Looking forward to the next challenge. And Happy St V day to all, it's alreaady the 14th here :-)

AnaBee, I think it was the wine that did it. I still lost 6 lbs in a week in the end, not including the gain showing today.

I'm going to bed now, Happy Valentines Day in advance to everyone! (though you know I'll be back in 8 or 9 hours to say how much I weigh, haha)

I did it - by the skin of my teeth but I did it yay!! Whoo Hooo

So tomorrow starts the new challenge - so to Easter and we will keep it as day's on plan and/or weight loss ... I'm going to really push the envelope for me and go for 16. I'm really hoping to step up the steps and get to regular walking and that that will pick up the WL a bit more and it will get me set into the teens weight wise ...

Tonight is LOBSTER!!! And butter Happy Valentines day my friends!

I think things are a little different in Canada because we have Good Friday, Easter Sunday and Easter Monday. Are we going by Easter Sunday on April the 8th or Easter Monday the next day?

190.4 today. I dropped back down but not quite to my goal! Oh well, I know I set a pretty hard one since I had less than two weeks to complete it because of when I joined the challenge

Happy Valentines Day guys! I think tonight I'll make some steak with steamed veggies and a carby side for my husband. Also will try to go for a walk with the baby today so I can go buy him some chocolate

How about Easter Sunday so we can weigh then enjoy Easter Breakfast and lunch or dinner without worry about salt retention from ham or anything else?

Now I do have another question ---- do you all think we should move this to the "other" forum so people not doing strict Atkins don't feel uncomfortable posting to this one?

Hi All!

I'm up for an Easter Challenge or a Clean Eating or Whatev's Challenge lol

Lost 12 lbs on this one - will log in late 2nite/early this morning to join up - whatev everyone wants to do is fine with me.

Got the Fry Daddy out over the weekend and made the yummiest chicken strips and one night we had cod fillets . . . will post the "breading" recipe later.
