1 cup green lentils
2 cups water
1 medium onion, chopped fine
2 carrots coarsely chopped
2 stalks celery, chopped
Bring lentils and half the onions to a boil, cover then simmer for 30 minutes. Add the rest of the onions, carrots and celery. Salt and pepper to taste. Simmer until lentils are tender. Serves 4-6
