Gylnne...I found the recipe, it was cut out of our local paper from the gal that runs the Farmers Market. As you can see by the ingredients, lots of calories. You can sub stevia for part of it and cut down on the butter to make it more calorie friendly. We only have it for special occasions. Last time I made it was Thanksgiving and I froze what we didn't eat. I happened to find it last week in the freezer and thawed it out. After thawing out, I stuck it back into the oven and heated until hot. The crispy topping was just as crunchy as when we had it the first time, so leftovers freeze well.

Apple Butternut Bake


1 large butternut squash (2-3 pounds)
¼ cup butter
3 Tablespoons brown sugar
¼ teaspoon salt
1 ½ quarts apples, peeled and sliced
¼ cup butter
½ cup sugar


Topping:
3 cups crushed cornflakes
½ cup chopped pecans
Butter melted, two tablespoons
1 cup brown sugar


Bake squash until tender, scrape out pulp and mash.
Add ¼ cup butter, brown sugar and salt. Set aside.


Heat other ¼ cup butter in skillet, add apples and ½ cup sugar, simmering until tender.
Spread apples in large flat casserole, spoon squash on top.


Top with the following topping. Mix 3 cups crushed cornflakes, ½ cup chopped pecans, two tablespoons melted butter and one cup brown sugar. Bake at 350 degrees until heated through and light brown on top.

My daughter went back to the surgeon yesterday and he went over about half that he did. She had L2,L3,L4.L5, done and 2 rods inserted. 2&3 were not expected. Her pain level is 6-7 so that is an improvement. She is to walk 50 yards today and get up to 100 Saturday. Her DH is so wonderful and is doing all her personal care for her. Love that man!

Dinner tonight is portabella mushroom stuff with sausage and fresh local corn. Even after 13 yrs the local produce still surprises me. k3

Waiting for our son and his gf to arrive. So excited to have them here. Last time was Sept for our anniversary. I really did dumb ...just realized it this morning...before breakfast my bs was 212, I was surprised as I thought I ate pretty well yesterday but thought well, maybe I forgot something. Then two hours after breakfast it was 345!! Since I'm never that high, I was really surprised as I thought I had taken my meds. Well, just a few minutes ago, I decided to look at my pills in my pill case and sure enough, everything was there except my Metformin!! I had put it in my dinner case but not my morning case! So I have missed four doses this week!! Made me so mad at myself! :( My dh did the same thing last month with his BP meds. I think we are losing it...anyway, it is now in there for the rest of the week.

My head and neck hurt some last night but not as bad as it has been. And my arm is better although I am still taking meds. Joe and I have decided that physically we don't like our 70s near as well as our 60s.:(

Karen3 - I go to the doctor next week. He will reassess my arm and BP. My BP is still a little high at times. If it is bursitis in my shoulder/arm, I think that takes a while to get well. The incr bs along with the head pain is a concern however I honestly think the pain is a result of my muscular/skeletal issues...but of course, I'm just guessing. I'm going to ask for another order for PT. I need that anyway for my back. I had this neck/head pain a few times when I was getting PT and a little additional massage to that area seemed to help. Of course, if he just dismisses my head/neck pain, I will consult someone else.

Bobbi - So you are now looking at regular houses, or townhouses? Sounds nice but would be concerned about the kitchen slanting. Hope it is something that is easy to fix. Congrats on reaching 125 again...sounds great to me. I'm really struggling to lose any. Seems like even when I eat right I gain. I'm right at the high end of my usual range now. But I will never give up.

Gawd, I am SO tired! Anyway...

Gorgeous day here, up into the 70s. Every bit of snow is long gone. I hope we aren't finished yet! We need more, more, more moisture!!

Bobbi - I've had that squash casserole, and it was scooped into a gourd for serving. It's very wonderful, yes... and, I'm sure, very high calories to go along with the high flavor! It makes for a decorative dish on a T'giving table.

I'm anxious to hear more about your house news... and high hopes for your newest looker. One of these will "take", really!

Is anyone agog and aquiver over the new Pope? Supposedly, he's even MORE conservative than his predecessors! Should be interesting, for those who are affected.

Had dinner with GM after giving her her shower. I'm ready to just go wilt someplace; she does take it out of me! My dear sweet sister is much more patient with her than I, but I do try. I do, I do!

Nothing to report, obviously. One more day this week, and I'll be ready for some time off. Today was NUTS. I was there 3 hours before I had a chance to even open a file, what with the phones and the walk-in patients and what not... just crazy. I ended up staying an hour late, because I could leave the boss lady alone with that. She's frantic, anyway, these days, worried about a new person, training, etc., etc. I'll take up as much slack as I can, but a lot of it will still fall on her. I keep telling her to take a deep breath, that all will be just fine. She calls me "mom"... :(

Hi everyone,I had such a nice day. spent it doing crafts with my grdd Hailey. shes alot of fun with a quirky sence of humor. i worked on my cards for the friendship mission, and she made a baseball cap with duck tape, i took pictures but couldnt get the puter to co-operate :?: shes going to spend the night so i see a late nite of movies and popcorn. hoping your day was fun too. rosey :wave:

Good Morning everyone...we're busy getting everything spotless for another showing of the house tomorrow so I won't dawdle here today. I'm so pleased with my Hibiscus plant, it's in full bloom and the flowers are gorgeous for our buyer.
The recipe below was on my email today, looks good. One reviewer said the onion soup mix was over powering in the recipe and she'd leave it out next time. If you make this recipe, go to Allrecipes.com and read the review before you make it. I haven't yet but will next week. I need to buy some corn flakes first.

Rosey...wish we had some of your moose meat. Bruce didn't get a deer last fall, 1st time in years and years. I've been buying beef roast when on sale and carving off the fat, sinew and grinding it up for burger. I hate to admit how good it is since we've lived on game meat our whole marriage. Who knows what they force feed cattle and what they give them to grow bigger. At least with game you know they eat naturally as God intended.

K3...Wish we had affordable portabella, I don't ever buy them because of the expense. I like your varied menus and living in a warm place with year round farmers market must be grand.

Mary...Oh how we can relate about our aging bodies. I'm 67 and the strength in my arms and hands have disappeared. My left knee hurts when I climb the stairs and my balance isn't what it used to be. I have one of the ritis boys in my left thumb. Geeeeeeeeeeeez I'm going downhill. BUT, we're all on the top side of the soil...Amen!

Gently press the chicken breasts into the cornflakes mixture to coat and shake off any excess. Lie the coated breasts in the buttered baking dish. Drizzle the melted butter over the chicken. 4. Bake in the preheated oven until the chicken is golden brown, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I have a hard time making things concise sometimes. I agree about needing spaces between paragraphs and usually do but I was trying to squeeze it all on one page on my computer cuz it's been acting funny. Let me just say - DH test results good. DM's not in good shape. Despite my best efforts she is now in nursing care. Delaying further chemo for 3 weeks to see if she can get built back up.

Bobbi - Good luck with your showing! Fingers crossed!

Cajun - I know just how you feel. When my DS moved into his townhouse, as I was hugging him goodbye I was crying. I said, “I just want you to be happy.” He said, “I am happy.” then I said, “But I want me to be happy too!” If I could do things over again, I would have kept my mouth shut about him buying his own place. I don’t care that the whole world was saying that it was a good time to buy! Heck when we bought our first house interest rates were 13%. I don’t know what I was thinking. But I have to accept it.

Deedee - I couldn’t have candy in my house. Maybe your DH could smuggle it in and hide it! I used to tell my kids to hide they’re Holloween candy - and they did! I have to treat m self like any kind of addict. People don’t take mine (carbs) very seriously but my husband does humor me. Last night I had a salt craving. A crispy salt craving. Ate saltines. Better than some of the stuff I would normally go for but have to find something else on my plan. So glad your husband is in remission. What kind of cancer did he have? And thanks for the reminder of how bad it can go when you bring elderly relatives home. Mine just require too much care now. It takes a village…And you're so right about the men and their health. I am so tired of being the family hall monitor. One of my biggest fears is that my parents will out live my husband. I do know that I think it is worse when the mind goes. I learned at a support group that you start mourning your loved one as they are mentally deteriorating - the person you knew and loved is not really there anymore.

Mary - sorry about all your pain. Have they ever mentioned fibromyalgia? That can kind of come and go, good days and bad. Also a rotator cuff problem. I’ve had both of those. And my fibro has been acting up the past few days. That would not explain the head/sinus. Could explain neck. I hope you can track it down. I have to say the anti inflammatory that I grew to love is Celebrex. My orthopedic doc said,"Makes sense, it’s a much better drug." Takes a while to get my insurance to pay for. The maker keeps pulling tricks out of its sleeve to prevent eligibility for generics to be made. Now I believe they are testing for pediatric dosing so delayed another year.

Karen FL - glad your daughter is doing better. That sounds like a very tough surgery. Nice that her DH is a good caregiver. He's a keeper.

Bobbie,we do have alot of moose burger. we are on a list for salvging moose that are hit by a car. they get to them right away and thats how we got our game meat this yr. we thought there wasnt alot of moose around here but they cut a 2 mile swath on a road near us for a power line and there was so much moose food on the ground we counted 21 moose eating the easy food.we were relly surprized. looked like a heard of cattle lol. hoping your weekend happy and on track rosey :wave:

I think I am coming down with the stomach flu....I have been fighting it this afternoon and right after work I ran to the drug store for some Emetrol. If you dont have it in your medicine cabinet I highly reccomend it.....sure makes an upset stomach easier to deal with.

Think this will be a short one..not the book I usually type as I'm not feeling well. We had a lovely last few days...our oldest son and his gf were here. It was fun to drive him around and show him how much our little city has grown. We went out to eat twice and of course my weight is up now even though I really didn't eat much. I ate about 1/3 of a chicken curry bowl and maybe 1/2 cup rice at a Thai restaurant and shared a burger and fries with my dh at the other restaurant. After the second restaurant (it was the next day), we walked a little, but I haven't been to the gym this week. Ds seemed to be coming down with something when he left and then we babysat our gc last night and the six year old was sick and coughing. Now I'm feeling extremely tired, my nose is running more than usual and I'm coughing too! Usually I rarely have colds and now this is my second since Dec! Going back to bed...
