Are you aware of Hi-Maize Natural Fiber for lowering the carbohydrates--I guess, the net carbs? You can substitute up to 1/3 of the cake flour in your recipe. If you're interested, check out the product (and explanation of why this works) at the King Arthur Flour website. Or at the Honeyville Foods website. :-)

I also have a low-cal/carb carrot cake that’s pretty good. I generally use whole wheat flour instead of white flour – ups the fiber a little.
