I buy the Trader Joe's turkey bacon because it's nitrate free and it's made of chopped and formed thigh as opposed to pink "soft serve" meat :)
I never made the cobb salad, ha! I did, however, make a fantastic noodle bowl last night: tons of mushrooms and broccoli, red and green peppers, 2oz chicken, 1oz rice noodles, chicken broth, sriracha, oyster sauce, all topped with scallions and cilantro. I'm going to make fish tacos and Guyanese stewed fish this weekend. I have an entire bag of avocados to use up soon. My Cooking Light issue that came in yesterday had a few different recipes for avocado salads, so one of those will probably be in my arsenal too :) |

LOL, I run a side cupcake business, and I made french toast cupcakes with maple syrup buttercream with BACON SPRINKLES. LOL, and that was the first time I've ever made bacon. I made it in the oven, is that right? I googled it and it said it was okay. My dad said it would be less messy there, lol.. I'm so strange. The bacon goes along with the can't-eat-ground-beef thing, too, lol. And tonight dinner is... out! DH will be back in town and I really dont feel like cooking. :D |

Since I've been calorie counting I usually have one "free meal" - so I guess tonight's going to be my free meal. Kate, enjoy your meal out!!! And the cupcake business is cool. I make cakes and cupcakes for fun occasionally. I don't do it often though because it's a lot of work, and every time I "sign up" to make a cake for an event, I waaaaay undercharge. :( |

I didn't make cauliflower rice, I just dumped a bag of frozen cauliflower in the crock pot with the rest of the ingredients. I added more ginger, garlic, green curry paste and scallions. Very yummy! Tomorrow I'm going out for sushi before I get my Irish on with my favorite local Irish band. Not on plan, but Paddy's Day only comes once a year. Last night was tuna steak marinated in super hot peach ginger habanero sauce, with broccoli & zucchini. Tonight I grilled marlin marinated in that ginger salad dressing they sell in produce section, and green beans. Wonder what other quick grilling fishies I have stashed in the freezer for tomorrow! :D |

In MARCH. :lol: If we don't have that, I'll have to find something else.. I'm not sure if I'll be able to find light coconut milk. If I dont, I might just use skim milk and a little coconut flavoring, LOL. It's an old recipe that I made with my mom as a kid - a Korean student taught her how to make it - fried - and we fell in love with it. I modify it so it's pan seared. That with some roasted broccoli and rice seems to be the plan. Or maybe I'll get lazy and make something else. It's hot here and I just made chicken stock :dizzy: |
So tonight I grilled a tuna steak with an island rub and ghost pepper salt, and cooked up some cauliflower. Good thing I'm not eating at home the next 2 nights - there's no more fish in the freezer! :D

Then chicken, black beans, low fat cream cheese and veggies layered with more veggies and more corn tortiallas. I use cumin, hot pepper flakes, basil, oregano... lots of spices and garlic. It's delish! For my "enchilada sauce" I literally dump a whole jar of chichi's hot thick and chunky salsa in a pot, heat it up with garlic and chili powder, and a little unsweetened cocoa, and then blend it with my stick blender. Tonight for dinner we are having: http://www.skinnytaste.com/2008/05/b...ary-6-pts.html without the lemon juice, I'll sub in some veg broth or pam, and I'm making it in a foil pouch on the grill, with asparagus and brussel sprouts under it. We shall also be having fingerling potatoes, likely microwaved and then also grilled in foil pouches with onions and mushrooms. I add veggies to everything to make DH consume more of them, lol.... My bf is having a dental procedure today, so whatever we have will ned to be pretty mushy, luckily most of the food on his side of the cupboard needs little chewing - beef stew, beef tamales, cincy chili, lol.
My mom got me the Joy of Cooking for Christmas last year. She said I graduated to a real cook :D I have been trying alot of recipes out of there the past few weeks, in all honesty they have been pretty boring. I have had good luck with their recipes for basic things like sauces, rubs, etc. though. |
