I'm making "this all looked good at the grocery store" soup tonight.

Deli ends - turkey, ham and a little piece of salami
onion & garlic
celery
roasted, peeled chestnuts
mixed mushrooms
roasted red peppers
spinach
aged Gouda - I think I'll throw a piece of the rind in
turkey base or veggie base & water
parsley
basil
oregano
poultry seasoning
black pepper

Tomorrow is roasted chicken thighs & veggies - again out of the new cookbook, will type it out later

munchy- I will definitely try the zucchini enchiladas! Yummy!

kateleestar- I am so glad we have some spice lovin' girls in here! I love spicy foods.

I love this thread but now I want to cook all day! ;) I made some skinnytaste meatloaf cupcakes with potato frosting and side of green beans and corn. Mmmmm and I have lots of leftovers frozen for later.

Tonight is green chile bison burgers on multigrain ciabatta rolls with roasted asparagus as the side dish. Im so excited lol

kateleestar- I am absolutely going to try that one! YUM!

I haven't planned out dinner yet. I have a bunch of leftovers and I have some chicken I have to cook up. I may try kateleestar's idea. I would have to get the cheese but I have everything else.
Last night I made this... http://allrecipes.com/recipe/chicken-philly-pasta/ with whole wheat pasta, 1/4 of the cheese and without the butter.

I don't think I'm gonna use mozz in it, Kay.. I think I'm gonna use the parm, but less, and then use some parm in the "breading" part.. Maybe top with a LITTLE mozz and broil it at the end. We aren't super-cheese-eaters. I might actually put a little blended up butternut squash in the middle with the zucchini, to add that creamy factor. Spinach blended would work too! :D

They were DELICIOUS. I love bison because it tastes SUPER fatty, but is very lean. I just ate the leftover burger with brown rice for lunch.

I was thinking the same thing on the cheese! I am also not a huge cheese fan... anymore. ;) But the butternut squash idea sounds divine!!

I've never been a huge cheese person.. A little romano on things, sure.. a nacho here and there... Dairy as a whole, I'm meh about, I guess. A glass of milk with like, warm cookies, YES, but randomly for no reason? Meh. Nah, I'm good. :)

Thats CRAZY! I wish I didn't love cheese. I can do without milk, but cheese.....maaaaaan. I'm kind of a cheese whore lol

Tonight is pollo asado from trader joes (I have some left over breasts from when I opened the package saturday), brown rice and KALE (I LOVE kale)

I love kale too! Soo yummy. This morning I forgot I had some collard greens in the fridge and thought it was kale for a second... I was disappointed when I realized it was the collard greens. :)

LOL. I love kale too... I have this tasty chick peas and kale recipe I'll have to pull out and post. SO GOOD.

And I think were having leftovers tonight, as I don't a) feel like cooking and b) really REALLY need to do laundry instead, lol.

And as a kid, even growing up in a mostly-italian family, we didn't use cheese tons. It was more of a garnish, I guess, like a sprinkling. My G-ma didn't drown anything in cheese, so we never got into that habit, I guess... :)

I use Pam, though, obv.. and I always toss in a little red pepper flake, and I sometimes use water in place of the chicky broth. I usually saute onion and garlic in the pan first, and I use just a heavy bottomed lidded pan, not a dutch oven. :)

I made chicken chili on Sunday, so I may eat that again. Yum! I use 1/4 cup chili powder and top with scallions, cilantro, and plenty of sriracha with a dollop of plain Greek yogurt. Mmm!

LOVE chili powder and paprika. I add those to seasonings to EVERYTHING I cook.

Tonight is probably gonna be take out tuesday.....my son started baseball and has practice tonight so I wont have any time nor do I want to spend time cooking at 8pm lol. Looking like Subway or maybe Taco Bell.
