I made one of my favorites today-- spaghetti with lots of swiss chard, a little butter, soy sauce, and freshly grated parmesan cheese. So good and sooo easy! I just boil the pasta, add the greens when there is about a minute left to cook, drain, put back in the pot, add a small pat of butter, a couple grates of cheese, lots of pepper, and a splash of soy sauce, and mix it all up. I think the lower sodium naturally brewed soy sauce is the best for this "recipe" (and for your health, of course!)

Tonight were having this: http://www.skinnytaste.com/2008/06/c...re-43-pts.html but with marinated chicken breast instead.. I'm also using one can crushed tomatoes, and adding in a jar of sauce. I'll also be adding zucchini and yellow squash, because I can, lol.

That sounds so good, Kate! And squash in pasta sauce is so yummy.

I'm thinking about cod fish delicately coated in coconut flour and Old Bay, fried in olive oil with a homemade mayo and mustard dipping sauce with a big pile of steamed broccoli on the side.

I love steamed broccoli... Even as a babykid. Loved it!

salmon brushed with a bit of ceasar salad dressing and smashed cauliflower and whatever vegetables I dig out of the crisper..yum!!

Tonight is chicken fajitas! ...but I'm taking the easy way out and getting a chicken from the store, slicing it up and coating it with sauce that i'll cook the veggies in, lol. UGH Thursday.. lol.

Mmmm, fajitas! I'm sauteeing some Trader Joe's seafood mix in garlic and chucking it onto a bed of romaine with cucumber and avocado.

Last night I made sauteed onion/red bell pepper/garlic/spinach mixed about 50% with rice, maple dijon salmon, and roasted asparagus.

Tonight is roasted cauliflower, Asian 3-bean salad, and grilled teriyaki chicken.

Well I've been out of town for over a week, last night was the first time I cooked in what seems like forever! Luckily I only gained 2 pounds when I was gone, we did a ton of walking so that really helped.

I have been on a vegetable kick since the farmer's market is back in our downtown. Last night was a grassfed burger on a sesame bun with grilled eggplant and brussel sprouts. I never like steamed brussel sprouts until I started making them this way-

1/2 lb brussel sprouts ends and outer leaves removed and cut in half
1/2 T of butter
2 T of parmesan cheese, grated or shredded
salt and pepper to taste

Steam the sprouts, when finished pour into bowl with the butter, cheese and salt and pepper. I definitely suggest using real parm, not the stuff in the green can. Also, last night I used Parmigiano-Reggiano and it was not quite as good as plain old parmesan. Believe me they are great! Especially for people who don't care for them.

Tonight ground beef tacos with homemade gucamole. Here's my usual recipe for taco meat-

1 pound ground beef, ground turkey or shredded chicken
1/2 tablespoons olive oil
1 medium yellow onion
1 to 3 cloves of garlic, minced
1 tablespoon chili powder
1/2 teaspoon paprika
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper

Tonight is grass fed skirt steak w/ a salad and chili lime corn on the cob.

Chili Lime Corn
4 ear of corn husked
1.5 T lime juice
1t lime zest
1t chili powder
1t salt
Whisk together and brush on corn before grilling

Since there are only two of us I am going to use the leftover corn in black bean salsa, I kinda of just whip it together-

1 can black beans drained and rinsed
1/2 red onion diced
1/2 yellow & red peppers diced
1T cilantro
1 ear grilled corn cut from cob
1 garlic clove run through a press or minced
1-3t olive oil
salt & pepper to taste

I'm going gluten free after suspecting some of my stomach issues may be attributed to it. I haven't decided what to make yet. I'm going grocery shopping after work, so I'll probably think of something soon.
