Hey ladies, just thought i would see if anyone would like to post some of their favorite healthy recipes. i know i'm always trying to figure out something really good and healthy for dinner and usually end up eating the same old thing. thought it might be fun!

It's 415 calories, so not the greatest thing in the world for you I guess. But it's very very yummy and very very filling.

ha, that's way too much work for me--I prefer to just bake my chicken breasts with store-bought salsa

Last week, I had a burrito from Chipotle for lunch, and I was HOOKED! Well, I certainly can't go there every day (my waistline and my wallet would both never forgive me), so I now make my own Chipotle burrito bols (the burrito filling in a bowl with no tortilla).

I marinate my chicken breasts in chile pepper infused macadmia nut oil (can easily use whatever oil you want and some chopped spicy peppers), onion, cumin, and garlic (puree all ingredients in food processor--I use my Magic Bullet), then cook on the Foreman grill and chop into bite-size pieces.

I cook up a big batch of the following at the beginning of the week:
  • brown rice (very yummy especially when cooked using chicken broth instead of water)
  • black beans (mash half of them with a fork and mix in with the whole beans and a splash of chicken broth)
  • chopped romaine lettuce
  • guacamole (there are recipes for this, but I'm lazy, so I just use 2 avocados and a packet of guacamole seasoning mix--I also add fat free sour cream)
At lunch time, I put some rice, beans, and chicken in a bowl and microwave for a minute. Then I add some fresh salsa (bought in the produce section of my grocery store) and microwave for about 30 seconds. Then I add some fat-free shredded cheddar cheese, guacamole, and lettuce on top--delicious!

This is quite honestly the single most filling lunch I have EVER made. I can eat lunch at 11:30am and still not be hungry before my 5:30-6pm dinner.

I'm like Jill I go for simple recipes. Sorry I don't have the nutritional information I just enter them into fit day each time I make them.

Salsa Chicken
1 can black beans
1 can corn
1 cup salsa
4 chicken breast or boneless skinless chicken thighs

Mix corn, blackbeans, and 1/2 cup salsa in crockpot. Place chicken over mixtures and add remaining salsa. Cook 6-8 hours.

Chicken Salad
Place several large chicken breast into crockpot with water. Cook until done. Take chicken out and cool. Shread chicken and mix in light mircale whip, seasoning salt, mustard, onions, and celery. Serve on bread, toast or crackers.

Skillet chicken

Make one cup whole wheat pasta.
Simmer 1 cubed chicken breast and onions in chicken broth until chicken is no longer pink. Drain any remaining broth. Mix chicken and onions with pasta. (The orginal recipe called to add spinch at this point and wilt. I don't like spinch so I skip this step). Melt one peice lf provolone cheese on top.

Roasted Chicken (well at least that is what it taste like)
Take one chicken quater (leg/thigh piece) and remove the skin. Coat with seasoning salt. Bake in oven at 350 degrees for 30 minutes. Flip chicken over and bake an additional 30 minutes.

Hi everyone, great recipes! But just curious, anyone with very portable recipes? I've been trying to bring my lunch to work to save money and calories, but I just bring microwavable soup and a sandwich, it's going to get boring fast.. I am just not the most creative when it comes to food so any suggestions would be appreciated. Thanks in advance!

If you've got access to a microwave, you can bring just about anything for lunch. I bring my burrito bol stuff to work--I just take 2 containers: 1 has rice, chicken, and beans (so I microwave that), then the other has the salsa, guacamole, lettuce, and cheese, so once the first one is heated, I just dump the rest of the stuff on top.

You can bring leftovers from the previous night's dinner, salads, pasta, fruit--you really can bring just about anything. Even if you don't have access to a fridge, you can buy an insulated lunch bag and a couple of ice packs to keep cold food cold.

I actually sort of eat 2 lunches every day. I get to work at 7am, so I am up by 5 in the morning, so I am usually hungry by 10 (breakfast at about 5:30, small snack at maybe 8:30-9). I bring a Lean Cuisine (their blue spa line--those ones only use 100% whole grain pastas and rice) for one meal and my burrito bol for another right now, but I've brought lots of other things in the past. I find if I make a big batch of something on the weekend and portion it out into 5 small Gladware containers, then my lunches are all set for the week. I've done this with pasta, homemade soups, stir fry dishes, homemade fruit salad, sandwiches (I'm a fan of peanut butter and jelly ), salsa chicken, chicken w/barbecue sauce and cheese (just about any kind of chicken, really)...I am not awake enough in the morning to prepare anything before I go to work, so anything I can make on the weekend and not have to worry about all week is a Godsend.

What is REALLY funny Jill is that before I saw your recipe, I made your 'burrito bowl' for dinner last night. We have Qdoba up here in Michigan, and they call it a Naked Burrito. The only thing I do differently is I add lemon juice and cilantro to the rice to make it a bit more southern, then I use chipotle lime marinade for my chicken =)

I always bring my lunch and here are some things I usually have:

Salads.. tons of them with tofu or with chick peas on them. As many veggies as possible.

Cut up veggies with Hummus - there are tons of different kinds at the grocery store to keep interest up

a can of tomato soup with added black beans and some spinach/kale.

sometimes I'll just hard boil and egg and bring an apple and some cheese or ham plus some veggies on the side.

I am also single and like to cook so I usually make extra: chilli, stews, curry chicken, etc. and freeze individual portions for lunches so I don't get sick of them and can just pull one out on days when I don't have much for lunch.

I know some of these are boring.. just things I like to pack with me for more ideas.

mmm! I might have to do the burrito bol thing myself one night. I love Chipotle burritos too, but at about 1000 cals per, it's not quite worth it. In salad form though and cooked at home I'm sure it's MUCH healthier.


My favorite way to make chicken:

Ginger-Lime Chicken
Spray a pan with Pam and heat on med-high until hot. Add chicken breast, about 3 min per side or until brown.

Squeeze half a lime into a small bowl (I just use 1tbsp bottled lime juice), add 1 tbsp honey, 1 tsp minced bottled ginger or 1/2 tbsp fresh grated ginger (ha, as if!), and a pinch of salt and pepper.

When the chicken is browned, pour the honey/lime mixture on top, reduce heat to low, cover, simmer, turning occasionally for 8-10 minutes.

about 200 cals per chicken breast (the recipe makes enough lime/honey mixture to coat 2 chicken breasts).

I have NEVER had a complaint about this recipe. The remains of the sauce in the pan is really good drizzled over a side veggie like broccoli, too.
