I wonder if I shouldn't cook some tonight with my stew meat? It was supposed to be a french beef stew to serve with barley (I was going to use brown rice), but it ended up having a lot less juice that I think it was supposed to, so I mostly have meat and carrots and celery. Perhaps having it with the squash would be just the thing to fill out the meal a little.

i don't know if others will agree, but i think it would go with just about anything. it doesn't have much of a flavor really. very very mild. it's sort of sweet and crunchy. i would say go for it, and you can either serve it on the side, or as a bed.
