Count me as a big barley fan. I was just explaining to my sister and niece that subbing barley in recipes for white rice is less jarring to the taste and texture than swapping out to brown rice.

deblep - It's not easy to explain. It has a very warm flavor with. It tastes a bit like puffed wheat, it's a little like oatmeal but with separate grains. Hubby says it tastes like super golden crisp cereal without the sweetness, if that helps.

JustBeckyV - We have Quaker Quick Barley: 1/3 cup dry (about a cup cooked) - 160 cal, 0.5g fat, 37g carb, 5g fiber, 5g protein.

Thanks for all the ideas. Hubby is really interested in the lamb and leek stew over barley idea.
