Default So, What's for Dinner Tonight? ~ August

Tonight's Dinner, one of my favorites:

Boneless Chicken Breast sauteed with lots of fresh spinach, mushrooms and onions with fresh garlic, parsley, lemon juice and wine. Cooked separately - roasted brussel sprouts and fresh garlic.

Probably tuna salad on baby romaine with lots of tomatoes. We're spending the day at the waterpark so this is something quick and refreshing.

Salad: Romaine lettuce, tomatoes, cucumber, olives, FF cheese, croutons, Light Ranch
And some canned Salmon, made into patties with egg white an some crushed crackers, lightly fried in canola spray.

Stuffed peppers - mostly veggie ingredients from my garden. Red, yellow & green pepper shells, lightly blanched. Stuffing made with vegetable saute: zucchini, tomatoes, celery, mushrooms, garlic, parsley. Mix in some ground turkey, well cooked with all fat drained, some brown rice cooked in chicken stock. Bake at 350. Sometimes I dust the top with low fat cheese.
I'm hungry now. LOL.

"Gym" pasta. Not sure how it got that name, but it's quick to prepare.

Shredded shaved ham, 3 chopped olives, zest and juice of 1 lemon and 1 tablespoon of olive oil tossed through spaghetti and served with a green salad...
