Cyndi those mexican baked eggs look fantastic.

Saturday night was fish tacos in Romaine leaves. They were so good with grated cheese, sauteed broccoli slaw (in the same pan as the fish, so same seasoning), and guac and salsa. Tom pronounced them better that way than in shells. I made a pumpkin black bean soup for the side.

Last night we had chicken and mushrooms with a really yummy side of pureed carrots and parsnips. Next time I'm going to try it with cauliflower too.

tonight I'm making the cauliflower crust calzone recipe. I've had my eye on it since I first saw it. Hope it's good!

Cyndi, I've been eager to try the cauliflower crust calzone recipe, too, but I'm going to wait until the price of cauliflower comes down. It's at an all-time high around here.

Since I'm going to be getting home late tonight, I'm grabbing a piece of Kale and Goat Cheese Mock Lasagna from my freezer stash for supper.

I made jambalaya last night.....MMMMMMMmmmmm! I've never had it before, but it was delish. It called for andouille sausage, which I did use...but less of it, and I cook it the drained (squeezed) as much fat out as I could. Really, that was the only fat in there. Served it over rice, even DD enjoyed it.

Tonights dinner is stir fry - Yummo!
W/ chicken, zuchini, yellow & red peppers, sprouts, snowpeas and bean thread noodles topped with a dash of soy sauce and probably a drizzle of franks hot sauce. I may or may not sprinkle a few crushed peanuts over the top.

watch the reviews, I did what they said...no olives, sub chicken broth for wine (kids don't like that...I do!), add italian seasonings, salt and pepper). I would've added mushrooms (hubby made it). Served over rice. I had some leftover pureed cauliflower/cabbage that was a good side dish.

Last night we had cauliflower crust pizzas - one pesto and cheese and one with sauce, the co-op's own chicken sausage (so low fat I have to add oil to cook it), mushrooms, and more cheese. Then I made peanut butter pie for dessert with a thin chocolate layer over the top. I actually didn't notice the additional sweetener in the recipe until after the pie was done. We didn't miss it at all.

I'm working on the menu for the week. Definitely trying that cauliflower cabbage dish.
