Phase 1, Alternatives

B - omelet with diced red pepper and some chopped tomato
L - Spaghetti Bolognese (super-restricted 1X/week) with chopped mushrooms on "zoodles" [I am thinking about doing the same dish but with Sloppy Joe mix, adding some Italian spices and garlic so it would be something similar but not super-restricted]
S - EAS RTD cafe caramel iced coffee
D - tofu and broccoli stirfry

The veggies add up to the right amount.

NOTE: be careful if making "zoodles" - I have a Vegetti injury owie!
