ok i know i said id eat a spinach and cheese omlete...but i just didnt have the energy to wash the pan lol... so i just had some WW toast with some simply fruit strawberry spread....problem is...about an hour later i was feeling really sluggish and tired...so i thought id need a little sugar pick me up and ate a forkful of chocolate lava cake that we had left over

picked me up for 15 mins then i started feeling worse ... so i got smart and ate a grilled chicken salad for lunch (had some of that leftover chicken from last night...yummy on the salad

) and i fell tons better!!!
wanted to share a reciepe for some pumpkin spice muffins that i got at my local wic office...i used WW flour and splenda instead of white flour and sugar...also used sunflower oil instead of vege oil...tasted a bit dry to me...so maybe next time ill try it with some aquave(sp?)...i also used craisons instead of raisons....my kids eat these up
Master Mix (makes 11 cups)
9 c flour
1/4 c baking poweder
1 tbs salt
1 1/2 c shortening
stir together flour, baking poweder and salt thoroughly in large bowl or pan. cut in shortening with pastry blender (or use two knives) (what the heck is 'cut in'? lol) until mix looks like coarse corn mean. store in covered container at room temp
pumpkin spice muffins
2 c master mix
1/2 c canned pumpkin
1/4 c sugar
1/4 c milk
1/4 c vegetable ooil
1 tbs pumpkin pie spice
1/2 tsp ground cinnamon
1 egg
1/2 c raisons
heat oben to 400. grease bottoms of 12 regular size muffin cups or use paper liners. stir all ingredients except raisons just until moistened. stir in raisons. fill muffin cups 1/2 to 2/3 full. bake 15 to 20 mins or until golden brown. immediately remove from pan.
1 serving: calories 170; total fat 8g; cholesterol 20 mg (with original ingrediants)
