I made this in my bread machine yesterday. If your bread machine needs a different process then please adapt it to yours.
It isn't LOW carb, but it's definitely GOOD carb.
Heidi's High Fibre Bread
In bottom of bread machine, place:
2 cups of water
4 tbsp olive oil
Combine these dry ingredients in a separate bowl:
1.5 tsp baking powder
1 tbsp Splenda
1 c wheat gluten flour
1/2 c oat flour
1 c soy flour
1/2 c flax seed meal
4 tbsp skim milk powder
3 tbsp red bran
1/4 c oat bran
1/4 c white bran
1/2 c whole wheat flour
Pour the dry ingredients into the pan on top of the liquid.
Put 1 tsp sugar and 1 tsp salt around edge of pan.
Put 1 tbsp dry yeast into a 'well' in the middle of the dry ingredients.
I used the Whole Wheat Rapid cycle set at a 2 pound loaf. The crust was a bit dark, yet the insides were moist. I would try to set it at a lighter crust next time.
This is a very filling bread. A bit of tuna salad on top of one slice is a meal! The counts are as follows:
Based on a 16 slice loaf:
Fat 6.97 g / Carbs 20.38 g / Fibre 6.28 g / Net Carbs 14.09 g / Protein 6g / Cals 150

We have a place called 'Bulk Barn' nearby. I've heard others on the board refer to a 'scoop store'. If you can't find the red & white, just use regular wheat bran. I had added the two for variation but it probably won't make a difference.
