do you like garlic? have you tried cooking the veggies with garlic and olive oil? adds lots of flavor to almost anything, great for veggies. most people find certain veggies TOO soft. you might really like saute'd greens or spinach! never know also really good with tomato sauce added in.

There's a LOT of good nutrients in vegetables that are hard to get...and quite a few nutrients they don't even pack into vitamin supplements. So just remember that when you eat them, it might make things easier.
