Default Fresh Spinach.........

Any ideas on how to cook fresh spinach as a side? I have been adding it to my salads but now have a desire to cook some as a side dish. I am not into mushy canned spinach. Any suggestions????

I have this recipe from Denise Austin you take spinich and a lower calorie alfredo sauce with hard boiled eggs and eat it. But I think it's supposed to be a main dish. I love eating spinach cooked plain with some viniger on it. YUMMY!

Spinach Salad with Strawberry Vinaigrette
6 Servings - 1 pt per serving

2-½ cup Strawberries quartered
2 T. rice vinegar
2 t. brown sugar
2 t. olive oil
¼ t. salt & 1/8 tsp. Pepper
1-½ c. sliced peaches(used a pear instead)
2 T. slivered almonds
½ red onion thinly sliced
1-10 oz package spinach leaves

Place 1 cup berries and next 4 ingredients in blender. Process until smooth. (dressing)
In large bowl combine rest of ingredients and toss. Add the dressing.

This is the best salad I've had in ages.

Option #1: Put a large pile of spinach in the microwave for about 1 minute
drizzle balsamic vinegar on top when it's done.

Option #2: Do the same thing, but serve it under whatever pasta/rice dish you are serving the rest of your family. For example: I serve the DH and kids stir fry over a pile of rice, but I serve mine over steamed spinach. I serve the DH and kids pasta sauce over pasta, but mine over steamed spinach. (I am talking - think veggie filled sauce, not store bought).

I cook spinach and stuff it into mushrooms with minced garlic, minced onions and a little salt and bake them. YUMMY!!!!! And they are 0 points!!!!!!!!!!!! I can make a meal of them!!!!

I saute in some lowcal margarine with some garlic, then when wilted I add a garlic and herb laughing cow wedge or two. Makes it taste like creamed spinach, but without all the calories.
