I just went and bought a whole bunch of corn on the cob. Anyone have any advice on how to cook it? Ways to flavor it? I love corn, but I'm not sure what I'm doing!
As far as I am concerned corn on the cob doesn't need a thing - it has a sweetness all of its own and no added fat. I just boil it in lightly salted water and eat it as it comes out of the pot.
I usually cook mine on the grill. Take off the husks and silks. Then I spray it with ICINB or rub Brummel and Brown on it, sprinkle with salt and course black pepper, wrap in foil and grill.
When I boil it, I had sugar to the water not salt. It makes the corn sweeter. Especially since when you buy corn at the store its been sitting around awhile and to me loses its sweetness.
You can also take it off the cob and cook in the microwave or on top the stove.
Also you can roast it in the oven, but I'm not sure of what temperature to cook it at.
In the microwave. Leave the corn in the husk. Put it on a paper towel and cook for about 3 minutes. It really does come out incredibly juicy.... and so easy. Just be careful when pulling the husk off after cooking. It can be really hot.
I prefer steaming to boiling because a lot of the sweetness and nutrients end up in the water when you boil it. To steam it, bring an inch or two of water to a boil, turn down the heat so it simmers. Put the husked corn in a steamer basket, put the basket over the water, cover and let steam until it's done.
My favorite method is to grill it. You can put the well-wrapped foil packets right on the coals and grill your meat on the grill above. Whether you bake it on the coals or grill it on the rack, be sure to turn it so all sides cook evenly.
I remove the husk, wrap the ears in saran wrap, leaving an opening on the end, cook three minutes on high in the microwave, turn over, then cook another three minutes. You don't boil away any nutrients or flavour, and there's no added salt as in boiling.
