There's a recipe for chicken with barley floating around here which is very popular. You have to cook the barley with the chicken, though, so it wouldn't work this week. How about some sort of casserole? I'm going to make tuna casserole tonight with brown rice, but barley would probably work, too.
I'm not sure, but I think you need to be careful storing cooked grains for more than a couple of days. You could freeze some, I suppose, especially if it is in another dish or a soup.
