I copied the recipe below into a word document but have no idea where I got it from and I love them:
Diane’s Chocolate Chip Kashi One Point Muffins
Our WW leader handed this recipe out at our meeing on Friday. I just made a batch and they are good - taste like big brownies!
Points
6 - 1 cup whole wheat flour
0 - 2 tsp. baking powder
0 - 1 tsp. baking soda
2 - 2 cups "Kashi Good Friends" cereal
2 - 1-1/4 cup 1% or skim milk
3 - 1/4 cup sugar
0 - 3 packets Sweet & Low **
1 - 1/3 cup baking cocoa
1 - 3 egg whites or 1/4 c. egg substitute
.5 - 1/2 cup unsweetened applesauce
0 - 1/2 cup canned pumpkin or grated zucchini)***
4 - 4 Tbsp. chocolate chips
19.5 Total
Heat oven to 400.
Mix in one bowl - cereal (crush as much as possible), milk, sugar, sweet&low, egg whites, applesause and pumpkin. Let stand 5 mins. or more.
In another bowl, mix flour, baking powder and baking soda.
Add cocoa to cereal mixture. Mix well. Add flour mixture and chocolate chips until mixed.
Spray 14 muffin tins with Pam. Fill 2/3 full. Bake 20 minutes or until done.
Freezes well.
**I did not use the Sweet & Low - used 3 pkgs. of Sugar In the Raw instead.
*** Used the shredded zucchini.
I don't like artificial sweeteners, but if you do, the Sweet & Low would probably make these sweeter tasting. I really liked them without it - the Sugar in the Raw is zero points (for one serving - but 3 divided by 14 is still probably zero).
If you like chocolate, these are worth the effort!
