Are you kidding I make it all the time. It's a life saver. I call mine one point soup. I start with lots of broth, beef or chicken and two cans of V8 juice. I chop up tons of fresh vegetables, one can corn, one can beans, drained and one red potato. I add herbs, salt and pepper, garlic and onion. I have made it this way a lot and measured it out, counted all the points and it always turns out to one point per cup or less. Frozen chopped spinich and a handful of pasta is good in it two. Keeps in tupperware for over a week in the fridge. It's a lot more filling then the 0 point WW soup.
