Oh, special ordering omelets is super easy - I do it all the time. I just ask for a 2 egg omelet, very little oil and butter! If you've ever watched someone at like an omelet station at a buffet make an omelet in front of you, they tend to use a scary amount of oil, don't be shy to ask for only a LITTLE.
Definitely get the veggies, ask for a tiny bit of cheese (they might have a low fat cheese, can't hurt to ask) and get the hollandaise ON THE SIDE, if at all, hollandaise is a
killer. Use the tine method to get a taste of it, but use it sparingly!
