Default Need B'fast ideas

I am so bored with instant oatmeal I could just scream!
So I am needing some fresh new ideas for early mornings that do not require a frig or much fixing. Doesn't have to be typical breakfast foods, anything with some protein and carbs around 4 points. Any suggestions greatly appreciated.

How about EggBeater's omelet. YOu could have the zero point veggies ready and some fatfree ot low fat cheese ready when you do it. quick and easy and about 3-4 points MAX.

If you have a microwave handy you can make a breakfast sandwich. 1/2c egg substitute, boca (not morningstar farms) sausage, slice of reduced fat or fat free cheese, 1pt english muffin. This will give you a yummy 4pt breakfast. You can also do 1/2c fiber one w/ 1/2 vanilla almond breeze (delicious) and a banana. This comes out to about 2.5pts. Hope I've been able to help.

Default Breakfast Ideas

Have you tried the Western Alternative Bagels? The bagels are 1 point, and if you spread on 1 wedge of Laughing Cow Cheese, you have a wonderful 2 point breakfast. Add a piece of fruit if you want.

Here are a few recipes.

Fritatta
Saute in non-stick butter flavored Pam oven-safe frying pan:
1/2 green pepper (diced)
1/2 large onion (diced)
1 cup fresh sliced mushrooms

Add 3 cups cooked, diced baby red potato's, and heat through. Season
(I used salt, pepper, Italian seasoning, garlic)
Add 2 cups eggbeaters

Cook for a bit on top of the stove (until mixture starts to set)

Top with:
3/4 - 1 cup Veggie cheese (soy ...or use ff)
Fresh Basil (snipped)

Place in 350* oven, and bake for 20 minutes or until egg is set. Top with diced tomato and serve.

Makes 4 servings.

Chris' Breakfast Bagel
1/4 cup eggbeaters (if you want to use more, you can ...Eggbeaters are 1 point for up to 1/2 cup)
1 slice Kraft 2% Cheese
1 toasted Onion Western Alternative bagel

Fry egg substitute in a small Pam sprayed frying pan. When done, top with cheese. Take off heat, and let cheese melt. In the meantime, toast the bagel. Put it all together, and WALLAH ...you have a 3 point breakfast bagel.

NOTE: You can add a morning farms breakfast sausage patty for only 1 more point ...

Apple Fritter

1/3 cup Bisquick (the light one)
2 Tbsp Eggbeaters (or 1 egg white)
2 Tbsp low fat milk
1 apple, grated or finely chopped
2-3 Tbsp Splenda (or 2 packets or to taste)
dash of salt
dash of cinnamon
1/2 tsp vanilla extract

Mix all ingredients together. Heat a non-stick fry pan. Put batter in pan, and cook on medium heat until browned. Serve hot. Top with Smart Squeeze and a sprinkle of cinnamon and sugar.

Makes 1 serving (1 large fritter, or 3 small)

Chris' Bread Pudding
Butter Flavored Pam Spray
5 slices bread (1 point per slice)
2 cups 1% milk
1 cup eggbeaters
1 cup Splenda
2 tsp cinnamon
1 tsp vanilla
Dash salt
1/3 cup raisins

In a 8X8 inch Butter flavored Pam sprayed baking dish, break 2 1/2 slices of the bread into bottom of dish. Sprinkle with raisins and top with remainder of bread. Mix milk, eggbeaters, Splenda, cinnamon, vanilla and salt together until well blended. Pour mixture over bread. Push bread down with fork so that it's all soaked. Cover with foil, and bake in a 350* oven for 35-40 minutes or until set. Cool and serve with fat free Cool Whip.

Makes 6 servings
WW points per serving: 2

NOTE: This is very good for a low point breakfast. I warm it up ...it reminds me of French toast. You could also use chopped dates or banana in place of the raisins.

'Bacon' and Potato Scramble

3 slices Wilshire Turkey Bacon (Wilshire Turkey Bacon can be found at Wild Oats) - 3 slices = 1 point
1/3 cup cooked, diced potatoes (leftover's are great for this) - 1 point
1/2 cup eggbeaters - 1 point

Saute bacon and potatoes until brown. Add eggbeaters, and scramble together. Salt and pepper to taste. Serve hot with whole grain toast if desired.

Serves 1
WW points: 3 (without toast)

Pineapple Bran Muffins

1 1/4 cup 1% milk
1 1/2 cups wheat bran
1/2 cup brown sugar
1 1/2 cups whole wheat flour
1 Tbsp baking powder
1 - 8 ounce can crushed pineapple + juice (or 1/2 can + juice of a regular sized can)
1/4 cup eggbeaters or 2 egg whites
1/3 cup chopped nuts
1/2 tsp salt

Preheat oven to 350. Mix wet ingredients in a large bowl and let sit for about 15 minutes. Add dry. Mix well. Pam spray a 12 muffin tin, and divide batter into the tin. Bake 375 for 20-30 minutes.

Nutritional facts per muffin: Calories 106, fat .6 grams, fiber 4.7 grams

Makes 12 servings.

Special K makes some great breakfast bars their only 2 pt so I get to eat 2 of them for a 4 pt breakfast.

Try an omlett made with:

1/2 cup egg white substitute
4 slices deli ham (check your labels the kind i use is 1 pt per 4 slices)
1/4 cup FF cheese
and 2 tblsp mild salsa

total 4 points

28g Honey nut branflakes 1.5 with skimmed milk 0.5 and a chopped banana 1.5 always goes down well with me 3.5 points...o dnt forget to drink lots of water.

I assume no fridge means no milk?

How about a light english muffin (for 1 point) and a banana (or any other piece of fruit)?

Hard boiled eggs are also great. Make em at hope and take the shells all off. Then store in a container in the fridge. They should stay outside the fridge for a few hours, so by the time you get to work they will still be good to eat.

I have a lunch bag that I am able to store in the freezer when not in use - so no ice packs are needed. Its great. My food stays through to lunch - even if it is something that normally needs to be refrigerated. I would suggest looking into something like that, it might help you out!

Put some frozen fruit in container top with yogurt & eat later. I bring this to work and really like it.

Toasted BLT or egg salad on whole wheat
