Default Road trip food?

Hi everyone!

My boyfriend and I will be taking a 12 day road trip in March. We are already on a limited budget so packing our own food is important, but I'm having a hard time figuring out which foods I can bring that are not only Weight Watchers friendly but require little work (e.g., no microwave, no freezer). Snacks are easy, but actual meals are difficult. We'll be bringing a cooler, but there's only so much we can fit in it. Any ideas?

Also, I'm making a "cheat sheet" of all the fast food places and restaurants we might be passing so I can at least have a good idea of what to get in case we do have to stop

If it were me I'd just make meals that can be eaten cold or at room temperature at home and then pack them accordingly. I guess it all comes down to how pick you are with food temperatures.

Rice paper wraps can store pretty easily I make some with imitation crab salad, cucumber, and carrots. It's only like 3 points per wrap.
Some soups are actually better at room temp (think cucumber soup and a sandwich).
I personally don't mind pizza cold, so if you can find one or make one that is reasonable in points then I'd say go for it. I know not many people can enjoy cold pizza.
Any salad! Chicken salad, quinoa salad, cous-cous salad, tuna salad, chick pea salad.

Also, you could probably look up raw food recipes if you really want, but if you do that, I wouldn't even bother trying to calculate points since odds are you'll be eating a bunch of 0pt veggies and fruits. (Zucchini noodles and things like that?)

I have no idea if I'm actually helping with this reply or just babbling. lol

Plan to stop off at grocery stores from time to time. A loaf of bread and some turkey would be helpful. That and a greek yogurt and an apple would be a good lunch. You can get those pre-washed salad bags with veggies already in them in the produce section as well. Maybe take some boiled eggs? Cottage cheese and fruit should travel well as well.

Instant oatmeal packs solve the breakfast problem.

Thanks for the advice! I'll definitely be bringing soup, wraps (I use Fiber One 80 calorie wraps: 2 pp each), and I probably will stop at grocery stores as you suggested. Unfortunately, I'm not a fan of fish so I can't bring canned fish... but it definitely sounds like the easiest idea, I wish I did like fish!

I'm not sure how you do your wraps, but I've taken to doing salads in wrap form a lot of the time. So I'll do a bit of dressing, sandwich meat, lettuce, olives, cheese, and whatever veggies I feel like at the time. There are other wrap recipes I have that take a bit of pre-prep, but the sandwich meat one is by far the easiest.

Cheese & Salsa quesadillas I also tend to like at room temp, or chilled, but don't really store for a long period of time and would require heat to make on the spot.

My boyfriend likes elbow pasta with parmesan cheese (shredded) and a little bit of evoo, and he eats that cold.. so that may be an idea too. If you get whole wheat elbow pasta the points per serving aren't nearly as bad. He makes the macaroni, waits for it to cool, then adds some evoo and cheese.

That's all I really got other than what's already been mentioned. Road trips are tough!
