Cream of Zucchini Soup
Gina's Weight Watcher Recipes Servings: 4 • Size: 1 cup • Old Points: 1 pt • Points+: 2 pt Calories: 65.3 • Fat: 1.0g • Protein: 3.5 g • Carb: 11 g • Fiber: 2.8 g • 1/2 small onion, quartered • 2 cloves garlic • 3 small zucchini skin on cut in large chunks • 32 oz fat free chicken stock • 2 tbsp reduced fat sour cream • salt • pepper Combine chicken broth, onion, garlic and zucchini in a medium pot and cook on medium heat. Bring to a boil, lower heat, cover, and simmer until tender, about 20 minutes. Remove from heat. Purée: Add the sour cream. Using an immersion blender, purée till smooth. Stir in remaining ingredients, and adjust seasonings to taste. Serve hot. Optional: Top with 2 tsp parmesan cheese - 1 point extra |
Hey everyone. Weigh-in was today and I'm down 1 lbs. It's actually way better than I was expecting because I ate horribly this week, went over my weekly points by 10, and didn't exercise. I'm hoping to do better this week now that I know where my problem is with points. It's dart night with my family and friends on Saturdays because they never have anything healthy to eat. I'm going to start bringing my own food to their houses so that I'm still eating with everyone else.

I was down 1.2 today at weigh in and I am now back to where I was when my At Work program ended. Between the end of the At Work program and when I started the Monthly Pass (which was about 3 weeks), I had put on 2.8 pounds. Now I am back down those 2.8 pounds and somewhat miffed that I "wasted" a month....but I'm very motivated to see the number keep going down.

I was down 0.5lb. Seems to be a trend for me. The slowness is what kills me, but i just have to be patient to lose it all... i also know that slower is better.

I was down 3.8 this week.
Someone I don't really know (yet!) came up to me after the meeting and told me that she had been thinking of quitting and I inspired her to keep going, and I was so stunned and touched I am pretty sure whatever reply I managed to stammer together barely made any sense. Wow, I know I get very inspired by the people around me but it feels incredible (and surprising) that I might say or do something that might help someone else. |
I was down 4.2 lbs this morning. I'm .8 away from 100 lbs!! The leader actually hugged me which was somewhat awkward. I hope I don't get all worked up about making 100 lbs next week. I usually have a great week followed by a not so great week. Going to spend the day at the pool with the kids and we're going to sit as far away from the concession stand as possible. I am (tentatively) back on the wagon. I've tracked all my food so far today and even passed up sausage biscuits for breakfast (one of the supervisors brought them for us at work today), having my yogurt instead. Working on water intake, too. I might splurge and have some coffee later which means I may have to dip into my weekly points to round out my dinner but as long as I am within my daily/weekly/APs I consider that on plan and that is ok with me. |
