A few people on a thread here mentioned kale chips.

http://www.3fatchicks.com/forum/vegg...-got-kale.html

I haven't had the opportunity to try them myself but I'm really intrigued especially since they were talking about their kids and/or grandkids loving them!

Here is one of many recipes out there.

http://vegweb.com/index.php?topic=16634.0

It looks so simple!

I have to admit to still eating and buying chips. I just look for ones low in saturated fat and higher in fiber and/or protein. (Multigrain chips, baked chips, vegetable chips, cooked in olive oil, etc.) When I do eat them I only eat the serving size which is pretty small but I'm satisfied with it!

Kale chips are pretty good actually. I went on a field trip in the 5th grade to some place where they had a buncho kale products and the chips tasted kind of like tortilla chips. Just kinda.

I cut a potato realllly thin and bake it at like 450 for 20ish minutes, sprayed with ICBINB spray and seasoned with whatever seasoning I feel like. They're really good!

hmm...i keep buying these Safeway brand "Eating Right" soy crisps that come in BBQ, sea salt, and sour cream & onion. I'm not sure what the name brand equivalent is... maybe Quaker has soy crisps? They remind me of rice cakes...

+1 I ordered a case of salt and vinegar off of amazon. I got the 100 calorie bags (like the size of a normal small bag of chips) and they are really really good. Way better than rice cakes or anything like that.

I recommend them for those who can't totally give up the occassionaly salty crunchy chip.

Wow. You guys are amazing! All these ideas are awesome and I am definitely going to try all the baked veggies. I also liked the suggestions of other products out there which aren't too bad for you. Sweet.

Thanks again!

I prefer to go the veggie route, whether it be the roasted veggies or the veggies and salsa route or anything of the sort - *to me*, I get waaaay more filling power, and lasting filling power at that, along with the nutrition with the veggies. And on top of them not filling me up at all, those chip things, just bring on the urge to keep eating more and more chip type things and it becomes a never ending battle.

Well, not as healthy as the veggie route, but I love this popcorn we buy. I know, I know, the lining in the bag is bad for you... whatever. It's prepacked, preportioned, ready to pop in the microwave, lightly buttered, for 100 calories. And there's a decent amount too, takes me nearly 45 minutes to eat the whole bag. (But I do savor it...) We found it at Costco, I think it's Orville. I do want to look into buying my own big bag of plain popcorn kernels... my grandma used to make her own using the jewel kind? It was pretty good.

I had some kale in the fridge leftover from a soup. I had no idea what else to do with it, so when I saw the kale chip suggestion, I figured what the heck

I ripped the leafy part from the stems and tore it into smaller pieces. Put just a few drops of olive oil in the bowl, it does NOT take a lot, a shake of salt, and some seasoning. I used bbq seasoning, like bbq chips. Then mixed it all together. Spread them out on two baking sheets and baked them at 350deg for about 6 min. All the recipes and stuff I've been seeing have said 10-12 min, that seems like way too much to me, unless my oven is just crazy. My "kale" chips were crispy, with some parts that were a bit chewier where it folded over. I liked that effect, personally, but I wouldn't cook them for more than 7 min.

I definitely suggest these kale chips. It sounds crazy, I know, but it does make a surprisingly satisfying substitution. You can make it as salty as you want, and season it any way. The texture is like very very dry leaves, which is all they are, I guess. It makes a nice audible crunch, they're so light, it's more of a crisp.

Kale chips have the Megan stamp of approval...lol

I love roasted chick peas. But usually when I want chips not much else will do. I like the mini rice cakes too.
