Mm, that spaghetti squash looks divine, and those enchiladas have me craving some of my own.
Using Vegan cheese of course (almond based cheese is my fav).

Angie went all veggie tonight with one of our favorites...Polenta with spinach/tomatoes and onions AND polenta with 2 types of zucchini/onions/garlic/tomatoes and Italian spices...

Polenta ~ Spinach ~ Italian Flavored Tomatoes

We always let the hubby think they can be home free~And get them for an extra little torture LMAO ~so you think your getting ahead By watching dancing with the stars....and she is loving that you are doing it & knowing you actually hate it ~HAHAHAHA~SO Funny.....My hubby has had to watch many shows with me that he hates~including GLEE!!! That was funny to see.........He was trying to act like he enjoyed it....VERY FUNNY INDEED.

LORI Angie watches GLEE...I have seen bits and pieces of it...not quite sure yet what to think of it...thank goodness there had been ballgames on that I was allowed to watch in the family room...

URTHWURM I make a killer spinach lasagna...the only time I made a vegetable lasagna it was lousy...I didn't use a recipe I just winged it...that bird couldn't fly! Let me know how yours turned out!

I made stuffed cabbage yesterday...very good....I don't stuff, I layer the cabbage over the meat balls....

yep...there is that word 4 letter word "meat"....hence no pictures of it...

working on more veggies...less meat...progress

Speaking of veggie lasagna, Cottagebythesea makes a killer butternut squash lasagna! It's South Beach friendly - lowfat ricotta and mozz, with roasted and sliced butternut squash in place of pasta. DELICIOUS. I ate so much of it, I didn't have room for chocolate. And I didn't care!

She split the squash in half and roasted cut side down until they were browned on top, and then she peeled them with a knife and sliced the squash in to 1/2 inch or so slices. It doesn't matter if they wind up in uneven pieces - sheets of squash would be nearly impossible to slice! Just get the thickness approximate for each layer, and use in place of the pasta in your favorite lasagna recipe. Yummers!

Well...The Veggie Journey continues...I am still eating meat but adding more veggie meals as we go.

Below is a picture of Sunday's dinner....A mixture of veggies over rice and sweet potatoes. Then a soup Angie made last night with roasted parsnips, carrots, onions, ginger and vegetable broth...very tasty

Angie made an all veggie soup last night....close to a minestrone...potatoes/tomatoes/zucchini/onion/green-kidney & northern beans/carrots..and some other stuff...very good...cornbread and corn in it too

Oh how I love my veggies.

When you stop to think about it, there is just an enormous ARRAY of veggies out there and what to do with them, as opposed to meat. More variety, more delicious-ness. More wholesome goodness. And an added bonus, for me anyway - more volume. Being a former super morbidly obese person - this is mucho importante'

Veggies are our friends.

8Spray 1 1/2 quart casserole with nonstick cooking spray.
9Spoon mixture into casserole.
10Sprinkle with remaining 1/4 cup cheese.
11Bake uncovered, 30 to 35 minutes or until heated through.
12Serve immediately.
I'm gonna steal this recipe and make it sometime in the next few weeks. Sounds delicious!!! I'm new to spaghetti squash, but the one time I made it we all really liked it.
