Try drinking a small can of V-8 juice or if you prefer, spicey V-8 juice. It is rich in nutrients, counts as a veggie serving and is great for hunger attacks.

My DH used to be the worlds most anti veggie person I know, so I used to sneak veggies in stuff. MY fave trick was to add a 1/2 cup of chopped, frozen spinach to spaghetti sauce. He just thought it was the spices.

He's gotten over his veggies phobia and now we eat them in all kinds of stuff. When we have fried potatoes, (with cooking spray, not butter or grease) I throw in yellow squash, orange, red, yellow and green peppers and onions. Yummy. I'll toss in zucchini if I have it too. Or I'll toss in the leftover green beans, corn, peas, etc.

I add chopped zucchini, yellow squash, fresh mushrooms,
peppers, onions, chunks of tomatoes etc. to spaghetti sauce too.

And a must, toss them in scrambled eggs or omelets! Chopped onion and peppers in burgers, toss chicken breasts in crock pot, cover with salsa, cook all day, serve with brown rice or baked potato, top a baked potato with broccoli and ff sour cream.

That's all I can think of for now.
