Default Need Vegan brown bag ideas

Hi all, I have been a semi-vegetarian (no red meat, eggs, milk) for a long time and I am trying to kick up the heat and go vegan again. I did this years ago I felt great but with little ones it was hard for me to keep it up. The kids are grown now and all the weight is back plus more, that high fat food is a killer so I want to try it again. I am a school bus driver which means most of the time I can come home for lunch. I am usually off between 9-1 but often I have field trips that I have to bring a brown bag lunch and snack. School will be starting soon and I want to do a little prethought planing. Anybody have ideas?

Thank you some of these look good. I find sandwiches comforting sometimes and it is hard to think of ideas sometimes that don't use meat, cheese or eggs.

i just made the pumpkin carob chip muffins from there. OMG soooo good! got some good ideas for my kids lunch too, cant wait till school starts again so i can get more. lol

left overs... the easiest and quickest! Leftover couscous, pasta, rice, ect. I love bring a nice hearty salad and a small tupperware of couscous!
