Question eggplant - what do I do with it?

I'm working to incoporate more vegetables into my diet for several reasons. One, that they're healthy. Two, more appropriate in weight loss. Three, I like vegetables. Four, I've nearly stopped eating meat. Five, I always eat the same ones repeatedly - which is great, but I think I should widen my scope a little.

So egg plant - what to do with it? What does it taste like? Can you incoporate it into pasta? Is it mushy?

I have never had eggplant, but it seems like something that would be filling or make a meal much more filling. So I'd love to get some on my next grocery trip, but I need to make sure I'll know what to do with it

Talking Eggplant Curry

My favorite eggplant recipe is an Indian dish called Baingan Bharta (Eggplant Curry). It's great served over rice. I have pasted the link below:

Japanese eggplant (the long skinny eggplant, looks kind of like a purple cucumber) is great sliced up in a veggie stir fry with soy/peanut/teriyaki whatever-floats-your-boat sauce. Eggplant parmesan (think eggplant lasagna, where eggplant stands in for the noodles) is wonderful too, but you’ve got to watch your portions cause the eggplant in that is breaded and deep fried (Yum!). Perhaps you could look for lower fat version recipes.

There are some eggplant recipes in the vegetarian menu forum. One that I particularly like is in the casserole thread.

You could always fry the eggplant and make eggplant parmesan... not diet-friendly, but it sure does taste good.

I love eggplant, and I've heard people say it's a real "woman's" vegetable. I'm not sure why.
