  • Lost another lb or 2. Yay! So thankful for Larabars (they have 'em at costco). We're eating guacamole almost every day. We got our organic produce co-op on Tues, and had a great dinner of fruit and salad. YUM!
  • Still trying to stay mostly raw here. I read a book called Enzyme Nutrition, that really helped me to be motivated to stay raw or mostly raw.

We're planning for a vacation next week, and I'm so pleased that my husband is wanting to do mostly raw even on vacation. We'll be doing a few non raw vegan things like tuna salad and chicken salad and boiled eggs, but for the most part we're just going to do fruit and veggies and nuts and seeds. The kids (ages 3, almost 2 and 6 months) are pretty much used to that now.

Guess I should have specified that we'll be camping, so I'll be making all the meals. It's been easy to fall back into old habits of not-so-healthy meals (frito pie and chili dogs) when we're camping, so my challenge this year is to keep it lighter.
  • mom2mollie - I just wanted to say I really enjoy reading your posts - thanks for keeping us updated! I do a vegan raw food diet during the day (mostly fruits, some veggies) - it gives me tons of energy to get things done... I never feel loaded down by food.

But, for dinner I tend to have a big salad and then cook some sort of carb. I'm also jogging, now 5 miles, everyday. So, my body seems to want this.

Regardless, I do think eating raw - especially during the summer- is simply an awesome way to live. The other day, I was out, busy, and had to eat out. The restaurant (in Germany) was pretty nice (not fast food by any means). As I ate the food, I couldn't help but taste all of the added salt and preservatives. It was supposed to be good - a year ago, it would have tasted good to me - but not anymore.

For me, what I find amazing about eating raw, whole foods, is that it ultimately helps your body to start to recognize and love "real food" again - making it oh SO easy to say goodbye to the foods that make us fat. Eating raw literally retrains your body to crave the good foods and stay away from the toxic foods.

I also have noticed that I'm not having problems battling the heat this year!
  • btw - my favorite raw dish in the moment is zucchini hummus.... its SO easy and really good. A huge bowl (made with two zucchini's and two tablespoons tahini) is only 200 calories.... so you can dip cucumbers, bell peppers, etc. or pour it over your salad. It's lighter and better for summer (than chickpea hummus).
  • Sorry I've been missing. Its been a struggle to eat the raw foods I've wanted to because of my grocery budget. I do get what I can but by later in the month I just can't keep it up. My waist and scale has the proof. UGH

I started menu planning so maybe this will help if I can get dinner planned down with whole foods that are basic I can be sure I have enough to keep up the fruit and veggie purchases through the month.

So next month I will get back on the eating raw. I would now, gladly, if I had the money to. Just tonight I used some of the starting to wilt lettuce and made a plain salad of mixed lettuces. It was missing my cucumbers, tomatoes and everything. And when I don't have my near daily mango I feel like to amount of water can quench my thirst. Weird huh?
