Default Butternut squash

Hello Veggie ladies!

I'm not a vegetarian, but I have a question for you all. Butternut squash--does it count as a fruit, a vegetable, or a starch?

I've read on Wikipedia that it's a fruit, then it said it was a vegetable, but it tastes to me more like a potato (probably why I like it so much!). So what's the deal?

I suppose it doesn't matter, it's good for you and delicious!

Also, does anyone have any suggestions about how to prepare it?

i always thought of it as a veggie but i don't know the technical classification. i love it too ill either cook it in a pot and drizzle some sugar free syrup on it or mash it with butter(i use dairy free).

I like just cubing it, steaming it and eating it plain, maybe some salt and pepper. Also roasting it in the oven is good.

I also like using butter nut squash in curry recipes. Just cube it up and create a tomato based curry sauce. Maybe add some chickpeas too.

i believe for diet purposes butternut squash is a starch (due to the higher sugar/carb content of it)

I count it as a vegetable. But it depends what purpose you're classifying it for. To ensure you get enough servings of veggies? I would count it as a veg.

Butternut squash and shiitake mushroom soup: http://www.famie.com/recipes/rc_bnutsq.htm. Soooo yummy! (Though obviously use veggie broth, not chicken broth .)
