Ditto. I have eaten a more varied and healthier diet since going vegan than I did as an omnivore, or even as a vegetarian, too. And I have never once felt like I was missing out, or suffering because of it.
Making non-meat protein foods at home is really easy. I made black bean burgers from Veganomicon this week, and they took maybe 15 min and were soooooo delicious. I confess that it was my first time making them, and I strayed from the recipe slightly--I added a chipotle pepper and a little adobo sauce to the recipe. Yum!
