Default Hatch peppers

Today at the store I saw these giant, beautiful peppers. The sign said they were Hatch Peppers from New Mexico and that their season was "brief."

I caved in to their beauty and got two. Now . . . what to do with them? I'm assuming they're pretty mild and would be a good base for stuffed peppers.

Anybody have any good (vegan) ideas?

Ooooh. Fortunately for me the season is not brief!

Hatch, New Mexico, the most wonderful place on earth!

You could roast them on a grill or under a broiler until the skin is black. Put them in a bowl and cover it with saran wrap. After awhile (I try to wait 20-30 minutes) peel off the skin.

I eat green chile on everything. Sandwiches, burritos, in soups (mmmm green chile stew). You could stuff them with rice and beans and tomatoes and bake them.

Hatch chiles are the BEST!

ETA They're good on pizza too. Have one on a veggie burger. Oh---and some are mild and some are HOT! Hatch can be all over the place. Hot is best, of course!
