Default Cookbook recommendations?

I am going back to eating vegan. I gave into pressures from family and friends who kept making comments about me being vegan and started eating meat again. I just don't feel as good as I did eating vegan so I'm going back and they can just deal with it.
Does anyone know any good cookbooks? I'm counting calories so I need to find ones that have nutritional information included.
Thanks

Nelie, you never cease to amaze me. You are a wealth of information and help.

Years ago I picked up a book in two volumes. Unfortunately, during our remodel, I think they got packed away and haven't resurfaced.

Vegetarian Epicure Vo. I & II. These books are older and don't have nutritional info, but the food is healthy. You can probably find nutritional facts at Fit Watch or one of the other sites.

I'm not vegetarian but I commend you on sticking to your guns. It's your body. They can treat theirs however they wish.

I think I'm going to try and find those books this weekend. I miss them.

Well, this one doesn't have the nutritional info in it, but I'll recommend it anyway: The Mediterranean Vegan Kitchen by Donna Klein. I'm currently into Med flavors (for some reason, they really keep me satisfied) and most of her recipes aren't very fat-heavy and pretty simple to prepare. I've tried several so far and they were all excellent.

Vegan with a Vengeance - by Isa Chandra Moskowitz!

I just bought it after using recipes from her website, www theppk com. It's wonderfully quirky, simple, and many ingredients are fairly easy to find. Great tips and hints as well. I havent been able to get a hold of her second book, Veganomicon... all the bookstores have been sold out for the past two months.

One warning: the desserts/cookies section is very tempting! Going vegan doesn't neccessarily mean 100% healthy, so the simply yet delicious cupcake recipes and such could throw you off. Otherwise, it's a wonderful book!

(I always look at the number of reviews - good, bad, inbetween, that a book recieves. Amazon.com has reviews from people all over the world, so I typically read them before ordering a book. and if I'm still unsure, I peruse the library or cooking section in my local bookstore).

Good luck with your search!

PS. Helpful vegan sites with recipes (and some awesome photos)
